How To make Maple Praline Biscotti
2 c All-purpose flour
1 ts Baking powder
1/4 ts Salt
1/4 c Butter; softened
1/2 c Granulated sugar
1/2 c Brown sugar, packed
2 Eggs
1 ts Maple extract
3/4 c Pecans; toasted
--finely chopped Glaze: 1 c Powdered sugar
1 tb Butter; softened
1/2 ts Maple extract
4 ts Milk; to 5 teaspoons
Recipe by: CFA, Quick 'n Easy Home Cooking, Dec 1995 Preheat the oven to 350 degrees; lightly grease a cookie sheet. In a small bowl, stir together
the flour, baking powder and salt; set aside. In a mixer bowl, combine the butter, sugar and brown sugar. Beat on medium speed for 1 to 2 minutes until well mixed. Adding the eggs one at a time and the maple extract, continue beating for about 1 minute until smooth. By hand, stir in the pecans. Gently stir in the flour mixture just until the dough is blended. Divide the dough in half. On a lightly floured surface, roll and stretch each portion into a 12 x 1 1/2-inch smooth log. Place each log on the cookie sheet, about 3 inches apart. Bake for 25 to 30 minutes, or until the logs begin to crack. Cool the logs for 15 to 20 minutes. Reduce the oven temperature to 300 degrees. With a seratted knife, cut each log diagonally into 3/8 to 1 1/2-inch slices. Lay the slices, cut side down, on the cookie sheet. Bake, turning once, for 10 to 15 minutes, or until crisp and lightly golden brown on both sides. Place on cooling racks; cool completely. Glaze: In a small mixing bowl, combine the powdered sugar, butter, maple extract and enough milk to reach glazing consistency. Beat on medium speed for 1 to 2 minutes until smooth. Dip the top edge of the cooled biscotti in the glaze. Place the dipped biscotti on waxed paper-lined cookie sheets. Refrigerate for about 1 hour until the glaze is hardened. Store in an airtight container. Note: To toast pecans, spread evenly in a shallow baking pan. Bake at 350 degrees, stirring once, for 4 to 8 minutes, or until lightly browned. Cool completely. Best Butter Pecan Cookies | Quick And Easy | Only 4 Main Ingredients
2 cups pecans, toasted and chopped
1 cup butter, two sticks, softened to room temperature
1/3 cup granulated sugar
1/3 cup brown sugar
2 teaspoons pure vanilla extract
1 teaspoon salt
1 ¾ cups flour
Additional whole pecans for topping

Preheat oven to 350°F
1. In a large bowl using a hand-held mixer or stand mixer fitted with a paddle attachment, beat the butter and sugar for 1 minute until completely smooth and creamy.
2. Add the vanilla extract and salt and mix long enough to incorporate.
3. On low speed add in the flour until well combined.
4. Add the cooled chopped pecans to the bowl and mix well.
5. Using a scoop, about 1 ½ - 2 tablespoon size, begin to scoop dough onto a lined cookie sheet.
6. Once all the dough is scooped onto the cookie sheet, begin to roll each ball until round and smooth. Place the round cookie ball back on the cookie sheet and place a whole pecan on top of the cookie ball and lightly press the pecan into the dough. This will flatten the ball into a cookie shape. Continue doing this until all the cookies are shaped.
7. Place cookie sheet in the oven for about 15 minutes or until the cookies are golden brown.
8. Transfer to a cooling rack to completely cool and Enjoy!

KETO TOFFEE RECIPE
Makes 20 pieces
1 cup unsalted butter
1 cup packed brown sugar free sweetener (Swerve brand)
2 tablespoons water
½ teaspoon salt
1 teaspoon vanilla extract
7oz sugar free chocolate chips
1 tablespoon flaked salt
⅓ cup crushed pecans
1️⃣ Prepare a square baking dish or ¼ sheet pan by lining it with parchment paper. Set aside.
2️⃣ In a saucepan, add butter, sweetener, water and salt. Heat over medium heat and bring to a boil. Continue to let cook, stirring occasionally until temperature on a candy thermometer reads 300 degrees.
3️⃣ Remove from heat. Immediately stir in vanilla and pour into prepared baking dish. Even spread toffee mixture and let sit for several minutes until the toffee starts to harden on the top. It will turn opaque.
4️⃣ When the majority of the toffee is opaque, sprinkle chocolate chips evenly over the toffee. Cover dish with aluminum foil for 4-5 minutes to help melt the chocolate.
5️⃣ Remove the foil, and spread the melted chocolate evenly over the toffee. Top with flaked salt and crushed pecans. Cover again and place in the refrigerator to further set for 1-2 hours.
** If the chocolate doesn’t melt after covering. Place the dish, uncovered under the broiled on high for 30-60 seconds.
