EASY Banana Cream Pie | VEGAN | Gluten Free | No Added Oil | No Added Refined Sugar
Banana Cream Pie is the ultimate comfort food - it’s layers of crunchy crust, vanilla pudding/custard, sliced bananas, and coconut whip cream. What’s NOT to like about it. The best part is you can use the vanilla pudding recipe to make TONS of other dishes - it’s great on its own or even in banana pudding!

Ingredients:
GF pie crust - homemade or store bought (see blog post for homemade recipe)
2 cups almond milk
3 tbsp corn starch - more as required
1/4 tsp salt
1/4 - 1/2 cup maple syrup or agave - depends on your sweetness preference
2 tsp vanilla bean paste
1 cup coco whip(divided) - homemade or store bought (see blog post for homemade recipe & WFPB option)
3 ripe bananas - sliced
Instructions:
1. In a medium saucepan with the heat turned OFF, add the cornstarch and cold milk - mix well with a whisk to combine and get rid of any lumps
2. Add salt, maple syrup, and vanilla - mix again
3. Turn heat on to medium high and stir continuously until mixture thickens. It’s very important to make sure you keep stirring, otherwise it will begin to get lumpy. (Note - if it’s still too thin, add 1 tsp of cornstarch at a time. If it’s too thick, add 1 tbsp of almond milk at a time until you reach desired consistency).
4. Transfer to a bowl and fold in 1/2 of the coco whip until well incorporated - transfer to prepared pie crust and chill in the fridge 3-4 hours.
5. When ready to serve, add sliced bananas on top of the pie, followed by remaining 1/2 coco whip. Garnish with some more sliced bananas

No Bake Caramel Cream Pie (Oil-Free, Date-Sweetened)
A luscious and rich no-bake date-sweetened dessert - what's not to love?! I hope you enjoy this recipe and give it try. It's really simple to make with a short ingredient list yet looks and tastes quite impressive. Cormac and I even had this as our dessert at our wedding!
Crust Ingredients:
-3/4 Cup Raw Almonds (100g)
-1 Cup Raw Walnuts (100g)
-1/2 Cup of Dates - packed (100g)
-1 tsp. Vanilla Extract
-Pinch of salt
Crust Instructions:
1) Add the almonds, walnuts, and salt to your food processor, pulsing until you have a bread-crumb like texture.
2) Add in the dates and vanilla extract and process until you the mixture is sticky enough to hold together as the base for your pie.
3) Press the crust mixture into your pie pan evenly. Set aside.
Caramel Filling Ingredients:
-1 1/2 Packed Cups pitted Medjool Dates (350 grams)
-2/3 Cup Almond Butter (150 grams)
-1 tsp. Vanilla Extract
-1/4 Heaping tsp. Salt
-5 Tablespoons of Water
Caramel Filling Instructions:
1) Add your dates, almond butter, vanilla, and salt to a food processor. Start processing and scraping down the sides if needed to bring the ingredients together into a rough paste.
2) While your food processor is running, add in the water, and continue processing and scraping down the sides as needed. Continue this until your caramel is nice and smooth, adding more water if your caramel seems too dry.
3) Gently spoon your caramel onto your crust and spread around evenly.
Whipped Coconut Cream Ingredients:
-1 Can Coconut Cream (or two cans Full Fat Coconut Milk)
-1/2 tsp. Vanilla Extract
-2-4 tsp. Maple Syrup (to taste)
Whipped Coconut Cream Instructions:
1) Refrigerate your coconut cream overnight. If using full fat coconut milk, refrigerate these overnight upside down. When you open them, open them from the top, only scooping out the cream that has separated from the other liquid that should be at the bottom.
2) Add your Coconut Cream to a large bowl and whip until smooth.
3) Add your vanilla extract and maple syrup and whip again until combined.
4) Add the cream to the top of your pie smoothing out evenly, and optionally grate some dark chocolate on top.
5) Store your pie in the refrigerator or the freezer. If freezing, take out to thaw before serving so the coconut cream has time to soften again.

YAY Finally #3 recipe in my Cream Pie Series and today we are making BANANA CREAM PIE!
Just like the first two (White Chocolate Berry Cream Pie & Double Chocolate Cream Pie) it is another no mixer required recipe and this one can technically be no bake too, but I did use graham crackers for the crust rather than sandwich cookies so baking them the crust for 12 minutes really helped prevent the crust from falling apart while I served them and ate them! You don't really have to bake the crusts, but it kinda helps!

This banana cake recipe really takes ‘basic banana cake’ to that next level! The best part is, it really doesn’t take that much more effort – I promise. Moist banana cake layers, filled with a luscious caramel and topped with cream cheese buttercream, this recipe is sure to please the crowd!
INGREDIENTS:
Banana Cake
- 2¼ cups (280 g) flour - regular, all purpose (see note 6 if you want to use cake flour)
- ¼ cup (25 g) cornstarch - also known as cornflour
- 1 tsp baking powder
- 1 tsp baking soda
- ½ tsp salt
- 2 tsp cinnamon - ground, powdered
- 3½ large (410 g) bananas - skin removed, make sure they're ripe and soft
- ½ cup (113 g) unsalted butter - room temperature
- ½ cup (105 g) unflavoured vegetable oil - I use canola
- 1½ cups (300 g) white granulated sugar
- 3 large eggs - room temperature
- 1½ tsps vanilla essence/extract
- ½ cup (125 g) Greek yoghurt - room temperature
Caramel
- ½ cup (100 g) white granulated sugar
- 2 tbsp water
- ¼ cup (60 g) cream - room temperature, minimum fat percentage of 34%
- 2 tbsp (28 g) unsalted butter - cold
- 1 pinch salt
Cream Cheese Frosting
- 1 cup (225 g) unsalted butter - room temp
- 4½ cups (570 g) icing/confectioners sugar - use more for a thicker frosting (see note 1)
- 1½ cups (335 g) cream cheese - cold, firm type (see note 2)
- 1½ tsp vanilla essence/extract
- 1½ tbsp lemon juice - must be fresh

Banoffee Pie is probably one of the easiest yet most delicious desserts out there! It should take you less than an hour to make. There are many versions of this indulgent dessert, but do try out my easy homemade style recipe to see if you like it. Enjoy! :)

------- Recipe -------
Ingredients:
For the Dulce de Leche:
Sugar 50g
Butter 42g
Milk (Warm) 80ml
Condensed Milk 380ml
For the Pie Base:
Digestive biscuit, Graham crackers or any kind of crackers 150g
Butter (Melted) 113g
For the Cream Topping:
Heavy Cream 200ml
Powdered Sugar 2tbsp
Vanilla Extract 2tsp
2 Large Bananas
Dark Cocoa Powder 2tbsp
Preparation
Start by making the Dulce de Leche or the “toffee”.
1. In a medium size non-stick saucepan, add sugar. Melt it on low heat. Try to spread out the sugar evenly so it doesn’t stick together and start to crystalise. Try not to stir it too much.
2. Once the sugar has melted completely, add butter a little bit at a time.
3. Once the butter has melted, add warm milk a little bit at a time.
4. Then add condensed milk, stir continuously.
5. Bring the heat up so it starts to boil. Keep stirring until it reaches a thick consistency that you want.
6. Take off heat and let cool completely at room temperature.
Make the pie base.
1. Preheat oven at 180c
2. Put crackers in a ziplock bag. Break it up into fine crumbs using a rolling pin. You can also use a food processor for this step.
3. In a mixing bowl, put the crumbs in and add melted butter.
4. Incorporate until it becomes wet sand.
5. Press the wet crumbs onto a 9” pie tin.
6. Bake in oven for 9 minutes.
7. Once done, pop it in the freezer to let cool completely.
Make the cream topping
1. In a mixing bowl, add heavy cream. Whip it up until it thickens.
2. Then add powdered sugar and vanilla extract.
3. Whip until it reaches stiff peaks.
Decorate the pie.
1. On the pie base, spread layer of Dulce de Leche.
2. Slice up bananas and place on the toffee.
3. Top with fresh cream and sift cocoa powder to finish off.
4. Enjoy!
