How To make Linguini with Greens and Potatoes
8 sm new potatoes
1/2 c green beans
cooked
3/4 lb linguini
1/2 c vegetable stock
1/2 c onion :
diced
2 tsps garlic minced
2 tsps red pepper flakes
1 1/2 c plum tomatoes :
diced
1/2 c tomato juice
4 c assorted greens
salt and pepper
Cook potatoes until firm-tender (bake, steam or microwave). When cool enough to handle, cut potatoes into 1-inch chunks. Cook green beans in vegetable stock and refresh in cold water. Cook pasta. Heat 1/2 c. stock in saute pan; add onions and cook covered until tender. Add garlic and red pepper flakes and cook 2 minutes. Add tomatoes and tomato liquid, potatoes, greens and green beans and cook until greens are wilted and potatoes are heated through. Season with salt and pepper. Toss cooked pasta with warm sauce.

Pasta and Potatoes Italian - ONE POT RECIPE!
Today I will show you how to make a great Pasta and Potatoes Italian style. You can keep it as a purely vegetarian dish, or you can add a bit of pancetta (as I did...) to make it even tastier.
Watch the full video because I have a special tip for you revealed: one you won't find in the recipes books but my nonna always used!
This meal can be served as a soup (simply add more water in the final step) or with a more dense consistency (that's what I did in this videorecipe).

Pasta and Potatoes - RECIPE
Prep Time: 10 mins
Cook Time: 50 mins
Complexity: Easy
Ingredients (3 people):
- 7 potatoes
- 250gr pasta (small shape)
- 150gr pancetta (optional)
- 1 shallot
- 400gr peeled tomatoes
- salt and pepper
- Parmigiano Reggiano cheese grated
- rosemary
- extra-virgin olive oil
Procedure:
1. Slice finely the shallot and the pancetta (if you use it in your version) and make them gently fry in extra-virgin olive oil;
2. Cut the potatoes in cube (small cubes are better!) and add them to the pan;
3. After a few minutes, add the peeled tomatoes, the rosemary and the crust of the Parmigiano Reggiano!;
4. Cover everything in water and let all simmer at low heat for 30-40 minutes;
5. Add more water as required and put the pasta in there;
6. Keep stirring for a few minutes and then...;
7. Serve and ENJOY!
