How To make Lentil Pasta Soup
6 c -Water, divided
1 1/2 c Chopped onion
1 c Sliced carrot
1 c Chopped celery
1 c Dried lentils
1/2 c Chopped red bell pepper
1 tb Brown sugar
1/2 ts Dried whole basil
1/2 ts Dried whole marjoram
1/2 ts Dried whole oregano
1/2 ts Dried whole thyme
1/2 ts Pepper
3 cn Low-sodium chicken broth
-10-1/2 ounce cans 1 cn Whole tomatoes (28-oz can)
-undrained and chopped 1 pk Frozen Italian green beans
-9-oz package 1 cn Tomato pasta (6-oz can)
3 Cloves garlic; minced
1 Bay leaf
1 c Orzo; uncooked
-(rice-shaped pasta) 1/4 c White wine vinegar
1 c Seasoned croutons
-plus 1 tablespoon Combine 4 cups water and next 17 ingredients (onion, carrot, celery, lentils, bell pepper, sugar, basil, marjoram, oregano, thyme, pepper, chicken broth, tomatoes, green beans, tomato paste, garlic, and bay leaf) in a large Dutch oven. Bring to a boil; cover, reduce heat, and simmer 30 minutes, stirring occasionally. Add remaining 2 cups water, orzo, and vinegar; cover and simmer an additional 30 minutes or until lentils are tender, stirring occasionally. Discard bay leaf. Ladle into soup bowls; top with croutons.

Lentil Soup

Ingredients
2 tablespoons olive oil, plus extra for drizzling
1 medium onion, chopped
2 carrots, peeled and chopped
2 celery stalks, chopped
2 garlic cloves, chopped
Salt and freshly ground black pepper
1 (14 1/2-ounce) can diced tomatoes
1 pound lentils (approximately 1 1/4 cups)
11 cups low-salt chicken broth
4 to 6 fresh thyme sprigs
2/3 cup dried elbow pasta
1 cup shredded Parmesan
Directions
Heat the oil in a heavy large pot over medium heat. Add the onion, carrots, and celery. Add the garlic, salt, and pepper and saute until all the vegetables are tender, about 5 to 8 minutes. Add the tomatoes with their juices. Simmer until the juices evaporate a little and the tomatoes break down, stirring occasionally, about 8 minutes. Add the lentils and mix to coat. Add the broth and stir. Add the thyme sprigs. Bring to a boil over high heat. Cover and simmer over low heat until the lentils are almost tender, about 30 minutes.
Stir in the pasta. Simmer until the pasta is tender but still firm to the bite, about 8 minutes. Season with salt and pepper, to taste.
Ladle the soup into bowls. Sprinkle with the Parmesan, drizzle with olive oil, and serve.

One Pot Lentil Pasta Soup | English
As the winter draws to an end, I though I would share one of my favourite soups! As you have probably realised I am obsessed with lentils and pasta, so this dish really is incredible! The soup is so comforting and super flavoursome!
One Pot Lentil Pasta soup
- 230g Pasta
- 1.4 L water OR broth
- 3 cups spinach
- Fresh Basil (to taste)
- 1/2 tsp Salt, Black Pepper & Red Chilli powder
- 1 Onion
- 4 Garlic cloves
- 400g Chopped Tomatoes
- 1 tbsp Tomato Puree
- 250g Chicken
- 80g Yellow daal (moong dal without skin)

Ingredients
Start with 1 cup dried green lentils 6 tablespoons olive oil ½ cup cubed ham
You'll also need a chopped onion, celery stick, and carrot.
Stock Up on 9 Cups Chicken Broth, a Pinch of Dried Sage and Thyme, and Season with Salt and Pepper.
Grab 2 Cups Cavatelli Pasta and a Box of Frozen Spinach.
Instructions
Soak Lentils for 20 Minutes
Cook and drain spinach. Set aside.
Sauté ham in a Dutch oven until golden.
Cooking with Onion, Celery and Carrot
Stir in lentils, pour in broth and herbs, and simmer until lentils are soft.
Add pasta, cook until al dente, then mix in spinach for a final touch.
