How To make Lemon Poppyseed Cake In a Jar
2 2/3 cups sugar
2/3 cup shortening
4 eggs
1/2 cup fresh lemon juice
1/4 cup water
3 tablespoons grated lemon rind
1 teaspoon lemon extract
1/2 cup poppy seeds
3 1/2 cups flour
1 teaspoon baking powder
2 teaspoons baking soda
1 teaspoon salt
7 one pint wide mouthed canning jars -- sterilized
I a large bowl, cream sugar and shortening with an electric mixer. Add eggs and mix well. Add lemon juice, water, lemon peel, extract and poppy seeds. Place dry ingredients in a seperate large bowl and blend with a whisk. Add creamed ingredients to dry ingredients, and mix with a spoon. Place 1 cup of batter in 7 sterilized, well-greased, one pint wide-mouthed canning jars. Wipe batter from rim. Place on a baking sheet in 325 degree oven, and bake for 55 minutes or until a toothpick inserted in center comes out clean. Wipe rims, and seal with sterilized seals and rings.

1 3/4 tsp baking powder

1/2 cup (120ml) vegetable oil
1 1/2 cups (310g) sugar
1/2 tsp vanilla extract
4 large eggs
3/4 cup (180ml) milk
1/2 cup (120ml) fresh lemon juice
2 tbsp fresh lemon zest
2 tbsp poppy seeds
pre heat the oven gas 4 or 350F or 176c
either line 2 x 8inch baking tins or 3x 8 inch tins. you WILL have to cook the 2 layer 45 mins approx, the 3 layer 20-25 mins.

Ingredients:
250 grams of poppy seed
50 grams silvered almonds 50
50 grams hazelnuts 50
50 grams cashews 50
50 grams raisins 50
50 grams dried cranberries
50 grams dried apricot
1/4 cups of honey
3 tbs of butter
1 tsp vanilla extract
Instructions:
Soak the raisins in a hot water.
Transfer your poppy seeds into a pot and cover with boiling water. Bring to the stove and cook on medium heat for about 40 minutes.
Line your sieve with a cheese cloth and drain your cooked poppy seeds. Leave it for couple of hours to get rid of the excess water.
Transfer your drained poppy seed into your food processor and process it until your poppy seeds get creamy (around 5 minutes).
Chop your nuts and dried fruits finely. You can use your food processor with a pulse option for the nuts.
In a large pot melt your butter and add honey. Heat it up and remove from the stove. Add your poppy seeds, nuts, dried fruits, raisins and vanilla and stir until all is well combined.
Cool and store in the fridge until you are ready to use it. You can freeze it for up to 6 months.

INGREDIENTS
For the Lemon Poppy Seed Cake:
3 cups cake flour
1 tablespoon baking powder
2 lemon zest
225 Grams unsalted butter, room temperature
2 cups Granulated sugar
4 eggs
1 tablespoon vanilla extract
3/4 cup whole milk
1/4 cup lemon juice
3 tablespoons poppy seeds
Make the Lemon Poppy Seed Cake:
1. Whisk 3 cups flour, baking powder and lemon zest till well combined, set aside.
2. Combine milk and lemon juice. Stir to combine and set aside (milk will curdle, similar to buttermilk)
3. Beat butter and sugar until pale and fluffy, about 3-5 minutes.
4. With the mixer on low, add eggs one at a time.
5. Add vanilla extract. Mix to combine.
6. Add the flour mixture in three batches, alternating with the milk, Do not over mix.
7. Add poppy seeds and mix. Scrape down the bowl. The Batter will be thick and fluffy.
8. Divide batter evenly between the three 8″ round pans.
9. Bake for 40-50 minutes, until toothpick inserted into center comes out clean.
10.Let cool in pans for 10 minutes.
Things to Notes:
This cake had 6 layers - so I baked this batch twice.
4 Lemons Used. 2 Lemons for Zest - same lemons used for the Juice and 2 lemons to decorate Fault line and Top of Cake and 1 Lime Used for Fault line and top of Cake.
CONDENSED MILK FROSTING
• 500g Soften Butter
• 1 Can of Condensed Milk
1. Beat butter – till becomes white in colour and double in volume.
2. Pour in Can of condensed Milk and beat till combined.
Lemon Curd - Store Brought - Brand Used - Bakers New Zealand Lemon Curd.
