How To make Lemon Poppyseed Spritz Cookies
1 1/2 c Butter or margarine
1 c Sugar
1 Egg
1 t Vanilla
2 ts Lemon extract
1 tb Lemon zest
Yellow food coloring 4 c Flour, sifted
1 t Baking powder
ICING:
1 c Sugar, confectioners
2 tb Milk
1 t Lemon extract
Yellow food coloring TOPPING:
Poppy seeds
Thoroughly cream butter or margarine and sugar. Add egg, vanilla, lemon extract and lemon zest; beat well. Sift together flour and baking powder; add gradually to creamed mixture, mixing to a smooth dough. Force dough through cooky press, using a star or swirl shape, onto ungreased baking sheet. Bake in hot oven, 400 degrees 8 to 10 minutes. Cool. Icing: Sift the powdered sugar and add the lemon extract. Add the milk a little at a time. You want the result to be a thin frosting. Add yellow food coloring and stir until blended. You want the color of the frosting to be paler than the color of the cookies. When the cookies are completely cool, put the frosting into a small ziploc bag. Cut a small hole in one corner, and squeeze the bag to force the thin frosting out the hole. Starting in the center of each cookie, make a sprial of frosting going out toward the edges of the cookie. Sprinkle with poppy seeds, and let the icing set. per Bobbie Beers Fidonet COOKING echo

SPRITZ COOKIES (SCANDINAVIAN BUTTER COOKIES) --Helga's Happy Holidays
These buttery spritz press cookies are easy to make and wonderful to eat! These Scandinavian butter cookies are my favorite of all butter cookies! They are also very versatile, with many different flavors being able to be used. This was my mom's recipe! There is also a chocolate version, and I'll include that below.
CLASSIC SPRITZ COOKIES
2 1/2 C flour, sifted
1 C butter or 2 sticks or half lb
3/4 C sugar sifted
3 egg yolks
1 tsp vanilla (any other extracts, use 1/2 tsp)
Cream butter until smooth and shiny.
Add sugar gradually and beat.
Add yolks and beat until fluffy.
Add vanilla and beat well.
Add flour in 2 to 3 portions, beating well after each time.
Fill cookie press with dough, and press shapes onto an ungreased or parchment covered cookie sheet.
Bake at 400F for 8 minutes.
CHOCOLATE SPRITZ--
Follow same above, except after creaming butter and sugar, add 1 1/2 squares melted and cooled chocolate and 1 tsp vanilla.

Stained glass cookies are SO EASY to make and beautiful to look at. I love seeing light peek through the centers and yes, you can decorate your tree with them, or you might prefer snacking on them straight out of the oven! There are no wrong answers here.
To make them all you have to do is cut your sugar cookies with a negative space inside, then crush your favorite hard candy and sprinkle it in the middle. Try not to get any hard candy on the sugar cookie as it will look messy. Also you really need a silicone baking mat for this, not sure baking paper would work for the release but you can let me know in the comments if you've tried it!
