Claire Saffitz Makes Tiramisu Icebox Cake | What’s For Dessert
We’re back with another recipe from What’s For Dessert, and if there was one recipe in the book that Claire had to give the first prize blue ribbon, it would be this one: Tiramisu-y Icebox Cake. It takes the beloved Italian dessert and lightens it, spinning the classic flavors of tiramisu into a homey yet impressive icebox cake that you can make ahead of time. It’s an assemblage of mousse-y mascarpone and coffee filling, coffee- and kahlua-dipped ladyfingers, and a whipped cream and cocoa topping. The finished dessert is a shining example from WFD’s Chilled and Frozen Desserts chapter, which celebrates creamy, airy, and cold confections. Metal loaf pan
(4 1/2 x 8 1/2 inches, measured across the top), hand mixer
Ingredients:
3⁄4 cup strong brewed coffee (6 oz / 170g)
1⁄4 cup Kahlúa (2.3 oz / 65g)
3 large egg yolks (1.6 oz / 45g), at room temperature
1⁄4 cup sugar (1.8 oz / 50g)
2 teaspoons instant coffee granules
1 teaspoon vanilla extract
1⁄2 teaspoon Diamond Crystal kosher salt or 1⁄4 teaspoon Morton kosher salt
1 cup mascarpone cheese (8.5 oz / 240g), chilled
11⁄2 cups heavy cream (12.7 oz / 360g), chilled, divided
1 (7 oz / 200g) package ladyfingers or savoiardi
Unsweetened cocoa powder, for sprinkling

Tiramisu Icebox Cake
This no-bake Tiramisu Icebox Cake comes together in minutes and is the perfect dessert with a cup of coffee or after a traditional Italian meal.

Ingredients
16 ounces cream cheese
1/2 cup ricotta cheese
3 Tablespoons half and half
1 cup powdered sugar
7 ounces lady finger cookies 200g
2 teaspoons instant espresso powder
1 1/2 cups boiling water
2 Tablespoons Amaretto liquor
1/2 cup unsweetened cocoa powder
Instructions
Set a kettle to boil.
Place 2 teaspoons instant espresso powder in a bowl wide enough to dip your lady fingers into and add the boiling water when ready. Set aside to cool.
In a large bowl, mix together the cream cheese, ricotta cheese, half and half and powdered sugar, adding more half and half as needed to get a smooth texture that can be spread with an offset spatula or spoon. Set aside.
Line a 13x9 casserole dish with parchment paper.
When the coffee has cooled to touch, add the Amaretto and dip each lady finger one by one into the coffee and make an even layer on the bottom of the casserole dish.
Take several spoonfuls of the cream cheese mixture (about half) and place it overtop of the lady fingers. Carefully spread into an even layer using the back of a spoon or an offset spatula.
Use a sifter to gently add a layer of cocoa powder (half of the amount called for).
Repeat with another biscuit layer, another cream cheese layer, and a final cocoa powder dusting.
Set in the fridge to firm up, at least an hour or overnight.

NO BAKE TIRAMISU ICEBOX CAKE
Ingredients:
500 grams Mascarpone Cheese at room temperature
200 grams Cream Cheese at room temperature
1/2 teaspoon vanilla extract
1 1/4 cups powdered sugar
400 ml heavy whipping cream whipped to stiff peaks
approximately 3-4 cups strong coffee cooled to room temperature
350 grams ladyfinger cookies
rum or rum extract to taste
1/4 cup cocoa powder
Instructions:
Add the Mascarpone cheese, cream cheese, and vanilla extract to a large bowl and whip on high speed with an electric hand mixer or stand mixer.
Add the powdered sugar and continue to whip on high speed until combined.
Gently fold in the whipped cream with a rubber spatula until it's well combined and the mixture is light and fluffy.
Add the rum or rum extract to the coffee and dip the ladyfingers in the coffee mixture one by one until you've lined the bottom of a 9-inch by 13-inch pan.
Smooth half of the Mascarpone mixture over the bottom layer of coffee-soaked ladyfingers and dust the top of the Mascarpone layer with cocoa powder.
Add another layer of coffee-soaked ladyfingers over the cocoa-dusted Mascarpone layer and then top with the remaining Mascarpone mixture, smoothing it out as much as possible.
Cover with plastic wrap and refrigerate for 2 hours or overnight.
Dust with the remaining cocoa powder right before slicing and serving.

For anyone who loves chocolate and coffee, here's a Mochacino Icebox Cake. An absolutely quick and easy recipe that requires no baking. If you like Tiramisu, you might want to give this a try too. It's basically the same great flavours with the addition of chocolate - what's not to love?!

Mochaccino Icebox Cake
Ingredients
56 pieces small ladyfingers
450 ml whipping cream
2 bricks philadephia cheese
2 tbp instant coffee/espresso
1 cup sugar
250 grams ChipIt Dark Chocolate, melted
Method
Whip together: cream cheese, whipping/heavy cream, sugar and instant coffee
Melt chocolate and let it cool
Make the base of the cake with ladyfingers. Layer it with: melted chocolate then whipped cream.
Make three layers of the ladyfingers, melted chocolate and whipped cream.
Top it with chocolate, if desired. Refrigerate overnight.
Take the cake out of the fridge. Release from the springform pan.
Line the edges of the cake with ladyfingers. Serve and enjoy!
