Mini Apple Pies... No Fuss Quick Dessert
These little apple pies have been a life saver for me to have in the freezer and pull out at the last minute for company or our family!
Recipe:
For each apple (I like granny smith) you peel, core, and dice up you need 1 Tablespoon butter, 1 Tablespoon brown sugar, and 1/2 teaspoon cinnamon. Two apples will get you about 12 little pies. One bought refrigerated pie crust will get you about 12 pies as well.
Saute` diced apples in butter for about 3 minutes, add brown sugar and cinnamon and continue to saute` for about 3 more minutes. Set aside.
Roll out pie crusts so they are an inch or two bigger than they were in package. You should be able to get 12-13 circles cut out of each pie crust.
Fill pie crust circles with 1 Tbs of apple filling, dampen edges if needed, and fold over. Crimp with fork or use Pampered Chef Cut n' Seal (listed below).
Baking: bake room temperature pies in preheated 425 degree oven for 11-13 minutes. If you are baking frozen pies then put in cool oven and bring to 425 degrees and then cook for 11-13 minutes. Bake until pies are golden brown watching that the bottoms don't get overdone.
Frying: Fry in 375 degree oil for a minute or two on each side.
Powdered sugar glaze: to make a bunch of pies use 2 1/2 cup powdered sugar and 1/3 cup milk. Whisk together and drench pies in glaze or drizzle over top. Feel free to mix up less glaze... watch video for tips on proportions :)
