How To make Indian Potato Curry
15 Baby potatoes
2 Zucchini
Ghee for cooking 1/2 Onion finely sliced
Pce ginger finely sliced 2 Cloves garlic finely sliced
ONION RELISH: 2 Red onions finely sliced
2 ts Sweet paprika
1 ts Cayenne pepper
Juice of 1 lemon Salt and freshly grnd peppe 2 sm Chillies seeded finely slicd
Fresh coriander leaves chpp 1/2 ts Garam masala
1/2 ts Ground cumin
1/2 ts Ground coriander
1/2 ts Cayenne pepper
30 Fresh peas podded
250 Ml coconut cream
1/2 bn Coriander
RAITA: 300 g Natural yoghurt
1/2 Continental cucumber
1/2 bn Fresh mint
2 Ripe tomatoes
1 ts Cayenne pepper
Salt and freshly grnd peppe Juice of 1 lemon To make onion relish, in a bowl combine onion, spices, seasonings and lemon juice, then squeeze them with your fingers. Let sit for an hour. Just before serving mix through coriander to taste. In a saucepan of lightly salted water, boil potatoes, in their skins, until just cooked. Allow to cool, then cut them in half. Slice zucchini on the bias into 5mm thick slices. Heat a little ghee in a heavy bottomed saucepan, and saute onion, ginger, garlic and chilli until soft. Add spices and fry for 30 seconds. Add all the vegetables, toss well and add coconut cream bit by bit as they cook. To make raita, put yoghurt in fine sieve and leave to strain for 15 mins. Grate cucumber with skin on. Chop mint leaves. Peel, seed and dice tomatoes. Combine vegetables with yoghurt and seasonings. Chill. Chop coriander leaves. When vegetables are cooked and a thick sauce has formed, add coriander and lemon juice to taste. ___--

Baby Potatoes - 1/2 Kg
Tomato - 4 Nos Finely Chopped

Method
Pressure cook the potatoes with some salt
Peel them and keep it aside
Heat a pan with oil, add the whole spices and roast them
Add onions, green chilies and saute them till the onions turn golden brown in color
Add ginger garlic paste and saute along
Add tomatoes and saute till they are soft
Add the spice powders, salt and saute well
Add the boiled potatoes and cook for about 2 mins
Add enough water and mix well
Close and cook the curry for 15 mins
Finally add kasuri methi and coriander leaves and mix well
Serve the Potato curry hot with roti or rice or with pulao

Potato Curry Dry For Rice & Dosa :
Potato Curry Recipe for Poori is a traditional North Indian breakfast recipe, usually referred as Aloo ki Sabzi. This spicy, aromatic and tangy potato masala tastes well with puri or Chapathi or any type of Roti. It is a very simple dish made by mashing the boiled potatoes and green chillies and doesn't take much time to prepare this. Aloo curry recipe explains step by step procedure on how to make poori Masala.
Ingredients For Puri Curry Recipe:
Potatoes: 2 large potatoes
Oil: 2 tbsp
Green Chillies: 5-6 slitted
Onions: 1 bowl, chopped vertically
Mustard seeds: 1 Tsp
Bengal gram: 2 Tsp
Ginger: 1 tsp, finely chopped
Curry Leaves: few
Salt: to taste
Turmeric powder: 1/4 tsp
Process For Potato Curry Recipe:
1. Firstly, cook the potatoes, peel and chop. Mash the boiled potatoes and keep it aside. Heat oil in a wok or Kadai add mustard seeds, let it splutter and add Bengal gram to it.
2.Fry until Bengal gram becomes golden brown. Add chopped onions, ginger, green chillies and curry leaves to the Kadai. Sauté well. Fry until onions turn transparent. Add a little salt. Add turmeric powder and mix well.
3.Cook for 2 to 3 minutes on medium flame. Keep stirring it.
4. Add mashed potatoes to it and sauté well. spread the potato evenly throughout the dish. Add a glass of water and mix well.
5. Check the consistency and add water accordingly. Also, check salt and adjust as needed.
6. Close the lid and cook for 5 minutes on medium flame only.
7. Give a quick toss and turn off the flame. Serve immediately.
Cooking Tips For Potato Curry Recipe:
1. Once the curry is cooked, serve immediately or it will thicken and may lose its consistency.
2. You can also add red chilli powder for a spicier version.

Ingredients for Aloo Curry:
(Tsp-Teaspoon; Tbsp-Tablespoon)
- Boiled Potatoes- 4 medium ones (250-280 gms)
- Red Tomatoes, sliced- 2 medium (120 gms)
Tempering:
- Cumin Seeds- 1 tsp
Spice Powders:
- Turmeric Powder- 1/4 tsp
- Red Chilli Powder- 1.5 tsp
- Coriander Powder-1.5 tsp
- Kashmiri Chilli Powder- 1 tsp
- Garam Masala Powder- 1/2 tsp
Other Ingredients:
- Onions, chopped- 2 medium (150 gms)
- Ginger Garlic paste- 1 tsp
- Green Chillies, slit- 3
- Salt- 3/4 tsp + 1/4 tsp
- Refined Oil- 3 tbsp
- Coriander Leaves, chopped- 3 tbsp
Preparation:
- Boil the potatoes. Cool and peel & cut into rough cubes.
- Chop onions and coriander leaves, slice the tomatoes, slit the green chillies.
Process:
- Heat oil in a kadhai and add cumin seeds.
- Once it splutters, add the chopped onions. Fry on medium heat for around 7-8 mins till light brown.
- Now add the ginger garlic paste, give a mix and fry on low heat for 2 mins.
- Add the tomato slices, the slit green chillies and 3/4 tsp salt. Give a mix and fry on medium heat for 2-3 mins till the tomatoes are soft.
- Now add the Turmeric, Red Chillli, Coriander and Kashmiri Chilli Powder. Mix, add a splash of water and fry on low heat for 2-3 mins till the masala and tomatoes are cooked and oil separates.
- Now add 250 ml water, mix and simmer on low heat for 2-3 mins till oil separates.
- Add the cubed potatoes, Garam masala powder and cook covered on low heat for 8 mins.
- Remove lid, garnish with chopped coriander leaves and season with a pinch of salt.
- Simmer for a minute and serve hot with Roti, Chapathi or Paratha.
