How To make Indian Chicken Curry
2 1/2 lb Cooked, Cubed Chicken
Water Salt Celery Tops 3 tb Butter
1 md Tart Apple, Peeled And Diced
1 md Thinly Sliced Onion
1 tb Curry Powder, Or More
1/3 c Raisins
1 c Chicken Broth
1/2 c Coca-Cola
3 1/2 tb Flour
1 c Half And Half
1 ts Salt
1/8 ts White Pepper
Hot Cooked Rice Rinse the chicken pieces. In a pot of boiling water, cook the chicken with a few celery tops. Cover and simmer for about 1 hour or until fork tender. Drain and strain the broth; reserve. Bone the chicken and cut into 1/2 inch pieces to measure about 2-1/2 cups. In a skillet, melt the butter. Add the apple, onion and curry powder. Saute for 5 minutes, blending well. Stir in raisins, 1 cup of the reserved chicken broth, and the Coca-Cola. In a bowl, mix flour with the Half and Half, stirring until smooth. Add the salt and white pepper to the onion apple mixture. Stir and cook over low heat until thick and creamy. Taste for seasoning. Add the chicken and turn into a covered container to chill overnight. Reheat in the top of a double boiler over hot water and serve on cooked rice with a selection of condiments; including, grated coconut, chopped peanuts, chopped raw onions, raisins, sweet pickle relish, chutney, chow chow, andor lime wedges. This easy chicken curry recipe will show you how to make an aromatic and flavourful basic Indian chicken curry. Indian chicken curry is a takeaway favourite that is freezer-friendly and quick to reheat, saving you time and money!
With my recipe for an easy staple Indian chicken curry, you will never have to worry about what to make for your family dinners. Made with just a handful of ingredients, this restaurant-style chicken curry will pair perfectly with garlic naan or even boiled rice.
Ingredients:
2 Red Onions
3 Tomatoes
2 tsp Garlic Paste
2 tsp Ginger Paste
1 Green Chilli
2 tsp Turmeric Powder (Haldi)
1 tsp Salt
1 tsp Chilli Powder
1 tsp Garam Masala
2 tsp Tomato Puree
1kg Chicken
Water 500ml
Method:
1. In a large wok heat up the oil on medium heat until hot
2. Add the chopped onions and the diced tomatoes then cook for 3-4 minutes until soft
3. Add the garlic paste, ginger paste, chopped green chilli, salt, chilli powder, garam masala and tomato puree then cook the spices for 3-4 minutes
4. Add the chicken and mix the spices to fully coat the chicken then cook for a further 10 minutes
5. Add the water and cook for a further 20-30 minutes until thickened to your personal preference – the oil will form a thin layer on top of the curry which will indicate that the curry is ready
6. Serve immediately and enjoy with chapati or garlic naan!

Ingredients for Masala Chicken:
- Chicken, curry cut with bones- 750 gms
- Onions, fine chopped- 4 medium
Marination with:
- Salt- 1 tsp
- Red Chilli Powder- 1/2 tsp
- Turmeric powder- 1/4 tsp
- Pav Bhaji Masala- 1 tsp
- Whisked curd/ yogurt- 4 tbsp
Paste:
- Ginger chopped- 1” piece (10 gms)
- Garlic- 6 cloves
- Green chillies- 2
- Tomatoes- 2 large (100 gm each)
Spice powders in the curry:
- Turmeric powder- 1/2 tsp
- Red Chilli Powder- 1/2 tsp
- Pav Bhaji Masala- 1 tsp
- Coriander powder- 1 tsp
- Garam Masala powder- 1 tsp
- Oil- 4 tbsp
- Coriander leaves, chopped for garnish- 2 tbsp
Preparation:
- Marinate the washed chicken pieces with the items indicated. Mix well and set aside for an hour.
- Take a blender and prepare a rough paste of the ginger, garlic, green chillies and quartered tomatoes.
- Fine chop the onions and chop the coriander leaves.
Process:
- Heat oil in a kadai or wok & add the chopped onions.
- Fry the onions on medium heat for around 15 mins till light brown in colour.
- Now add the prepared paste and mix well. Add 1/4 tsp salt, mix and fry on medium heat for 3-4 mins till it is cooked and oil separates.
- Add all the spice powders and mix well. Fry for 3-4 mins on medium to low heat adding a splash of water till oil separates.
- Now add the marinated chicken, mix and fry it on high heat for 3-4 mins mixing it well to coat the chicken pieces with the masala/spice mix.
- Continue to fry it on medium heat for 10-12 mins stirring it off and on till the chicken pieces and the masala/spice mix are roasted and oil separates.
- Add 1/2 cup water & give a stir.
- Cook covered on low heat for 15 mins till chicken is tender and oil separates.
- Garnish with chopped coriander leaves and serve hot with roti or paratha.
