Ingredients for Dhaba Special Egg Curry:
- Boiled Eggs- 6
For frying eggs:
- Oil- 1 tbsp
- Turmeric powder-1/4 tsp
- Red Chilli Powder- 1/4 tsp
Tempering:
1. Cumin seeds- 1 tsp
2. Whole red chillies- 2
Spice Powders:
- Red Chilli Powder- 1 tsp
- Coriander powder- 1 tsp
- Cumin powder- 1/2 tsp
- Kashmiri Chilli Powder- 1/2 tsp
- Garam Masala Powder- 3/4 tsp
- Kasuri Methi (dry roasted & powdered)- 1 tsp
Other Ingredients:
- Onions, fine chopped- 2 medium (150 gms)
- Ginger, fine chopped- 2 tsp
- Garlic, fine chopped- 2 tsp
- Green chillies, chopped- 2 nos
- Fresh Tomato paste- 3 medium (200 gms)
- Besan- 2 tsp to be mixed in 2 tbsp of water
- Oil- 3 tbsp
- Butter- 1 tbsp
- Coriander leaves, chopped- 3-4 tbsp
- Salt- 1 tsp
Preparation:
- Boil the eggs & shell them. Now heat oil in a pan, add 1/4th tsp turmeric powder , 1/4 tsp Chilli powder & give a stir.
- Now add the boiled eggs and stir & fry on low heat for 1-2 mins till golden in colour. Remove and set aside.
- Fine chop the onions, ginger, garlic, green chillies & coriander leaves.
- Blend red & ripe tomatoes into a paste
- Dry roast the Kasuri methi for 30 secs. Cool and crush it into a coarse powder.
Process:
- Heat 3 tbsp of oil in a kadhai. Add the cumin seeds & allow it to splutter.
- Now add the red chillies and give a stir.
- Now add the chopped onions and fry on medium high to medium low heat for around 8 mins till the onions are light brown in colour. Also add a pinch of salt after adding the onions.
- Add in the chopped ginger, garlic & green chilies. Fry for another 2 mins on low heat.
- Now add the tomato paste, mix well & then add 1 tsp of salt.
- Fry/bhunno for around 5-6 mins till the tomato is totally cooked, gravy is like a smooth sauce & oil separates.
- Now add the Chilli powder,coriander powder & cumin powder.
- Fry for another 2-3 mins till the masala is cooked.
- Now add the besan mixed in water & fry on low heat stirring continuously for 2-3 mins till the besan is cooked.
- Add 200 ml water and then add the Kashmiri chilli powder, garam masala powder & Kasuri Methi. Mix well & cook for a minute.
- Drop in the fried eggs, mix well, cover & cook for around 5 mins.
- Garnish with coriander leaves & mix well.
- Add a tbsp of butter to finish.
- Serve hot with roti or rice.

Egg Masala Curry
Written recipe for Egg masala curry
Prep time: 15 mins
Cooking time: 30 mins
Serves: 6
Ingredients:
• Boiled eggs 8 nos.
• Oil for shallow frying
• Turmeric ½ tsp
• Oil 3 tbsp
• Whole spices:
1. Cumin seeds (jeera) 1 tsp
2. Cloves 3-4 nos.
3. Cinnamon 1 inch
4. Whole red chilli 1 no.
5. Green cardamom 2-3 nos.
• Onions 3-4 medium size (chopped)
• Ginger garlic paste 2 tbsp
• Tomato puree of 3-4 medium size tomatoes
• Green chillies 1-2 nos. (slit)
• Powdered spices:
1. Turmeric powder 1/4th tsp
2. Coriander powder 1 tbsp
3. Red chilli powder
4. Fennel powder (saunf powder) 1 tsp
• Salt to taste
• Hot water as required
• Garam masala 1 tsp
• Kasuri methi 1 tsp
• Fresh coriander leaves 1 tbsp (chopped)
Methods
• Poke the boiled eggs with a toothpick.
• Set a pan on medium heat, add oil and turmeric powder, shallow fry the poked boiled eggs from all sides until the outer layer is crispy. Remove it on an absorbent paper.
• For the gravy preparation, set a deep pan or wok n medium heat, add oil and whole spices and sauté it for minute.
• Add the onions and cook until light golden brown, add ginger garlic paste and sauté for about 1-2 minutes.
• Add tomato puree and green chillies, cook until oil separates, add powdered spices and mix well, cook for 2-3 minutes.
• Add salt to taste and add little hot water if the masala gets too dry, mix well and cook for 5-6 minutes.
• You can adjust the quantity of water depending on how thick or thin you want your masala gravy to be, continue to cook for 5-6 minutes while stirring. Check for seasoning.
• Add the fried eggs to the masala gravy and cook further for 3-4 minutes on medium flame.
• Add garam masala, kasuri methi and freshly chopped coriander leaves, mix well with light hands without damaging the eggs and cook for 2-3 minutes.
• Your egg masala curry is ready to be served, serve hot with roti or paratha of your choice.

ALOO EGG CURRY | POTATO EGG CURRY | EGG GRAVY | EGG CURRY

Ingredients for Aloo Egg Curry:
- Boiled eggs- 4-5
- Potatoes, medium sized, peeled and halved- 4-5
To mix in the boiled eggs & peeled and halved potatoes:
- Salt- 1/4 tsp
- Turmeric powder- 1/2 tsp
- Onion, fine chopped- 2 medium
- Ginger garlic paste- 2 tsp
- Tomatoes, chopped- 2 medium
Whole spices:
- Bay leaf- 2
- Dried red chilli- 3
- Cumin seeds- 3/4 tsp
- Cardamom- 3
- Cloves- 4
- Cinnamon- 2 small sticks
- Turmeric powder- 1 tsp ( 1/2 tsp to mix in the potatoes & eggs before frying & balance while cooking)
- Red Chilli powder- 1 tsp
- Cumin powder- 1/2 tsp
- Coriander powder- 2 tsp
- Garam Masala powder- 1/2 tsp (Link to our Garam Masala Recipe:
- Oil- 3 tbsp
- Salt- 3/4 tsp
- Coriander leaves, chopped-3 tbsp
Preparation:
- Fine chop the onions and chop the tomatoes and coriander leaves.
- Take a bowl and add the peeled, halved potatoes and boiled eggs. Add 1/4 tsp salt and 1/2 tsp turmeric powder. Keep aside for 10 mins. Take a kadai/pan and heat the oil.
- Add the potato halves and fry on medium to low heat for 5 mins till they are golden.
- Remove and then add the boiled eggs. Fry till golden. Remove and set aside.
Process:
- Heat the same oil left over after frying the eggs and add the cumin seeds.
- Once it splutters, add the whole Garam Masala and the bay leaves.
- Add the chopped onions, mix well and add 1/2 tsp salt. Fry the onions on medium heat for 8 mins till golden.
- Add the ginger garlic paste and fry on low heat for 2 mins.
- Add the chopped tomatoes, mix well and fry for 2 mins. Add the turmeric, red chilli, coriander and cumin powder. Mix well and add a splash of water. Fry on low heat for 8 mins till the spices are cooked, tomatoes are soft & pulpy and oil separates.
- Add the fried potatoes & mix well and fry for 2 mins. Now add around 225-250 ml of water, give a stir & add the Garam Masala powder.
- Add 1/4 tsp salt , mix again & cover and cook on low heat for 10 mins.
- Remove and add the fried eggs, mix and simmer for 2 mins.
- Garnish with chopped coriander leaves.
