Ingredients for Egg Curry:
- Boiled Eggs- 6
For frying the eggs:
- Turmeric powder- 1/4 tsp
- In Refined Oil- 1 tbsp
Onion-Coconut paste:
- White Onion sliced- 100 gms (2 small)
- Fresh Coconut pieces- 40 gms
- Green Chillies, halved- 2
Tempering:
- Mustard seeds- 1/2 tsp
- Curry Leaves- 15-20 leaves
Other Ingredients:
- Ginger Garlic Paste- 1.5 tsp
- Tomato, sliced- 1 medium
- Turmeric Powder- 1/4 tsp
- Kashmiri Chilli Powder- 1 tsp
- Coriander Powder- 1.5 tsp
- Pepper Powder- 1/2 tsp
- Fennel Powder- 3/4 tsp
- Garam Masala Powder- 1/2 tsp
- Refined Oil- 3 tbsp+ 1 tbsp to fry the onion
- Salt- 3/4 tsp
Preparation:
- Slice the onion/s and peel the thin brown skin off the coconut. Cut the coconut flesh into pieces.
- To make the Onion-Coconut paste, heat 1 tbsp oil in a pan and add the sliced onions. Fry on medium heat for 2-3 mins till translucent. Now add the coconut pieces & halved green chillies and continue to fry on medium heat for another 2 mins. Set aside in a plate to cool.
- Add in a grinder/blender to blend into a coarse paste. Add 3-4 tbsp water to blend it into a smooth paste.
- Boil and shell the eggs. Heat 1 tbsp oil in a pan and then add 1/4 tsp turmeric powder. Give a stir and then add the boiled eggs. Stir and fry on low heat for 2 mins till evenly golden in colour. Set aside.
- Slice the tomato and wash & take out the curry leaves.
Process:
- Heat 3 tbsp refined oil in a wok or kadai and add mustard seeds. Once it splutters, add the curry leaves. Give a stir and then add the ginger garlic paste. Fry on low heat for 2 mins till raw smell goes. Add the tomato slices and then fry on medium heat for a minute.
- Add 1/2 tsp salt, 1/4 tsp turmeric and the Kashmiri Chilli Powder. Mix and fry on medium to low heat for 2-3 mins till tomatoes are soft.
- Now add the Onion-Coconut paste, give a mix and fry on medium heat for 2 minutes .
- Add all the other powders like Coriander, Fennel, Pepper and Garam Masala Powder and give a mix. Cook on low heat for 4-5 mins till oil separates.
- Now add 250 ml water, give a mix and simmer for around 2 mins till oil separates.
- Now take the fried eggs, make 2 slits on either side and drop into the gravy. Season with salt if required.
- Give a mix and cover & cook for 4-5 mins.
- Serve with rice or roti.

EGG CURRY
Preparation time 10 minutes
Cooking time 20-25 minutes

Ingredients
For Boiling Eggs
Water, पानी
Salt to taste, नमक स्वादअनुसार
2 tsp Vinegar, सिरका
7-8 Eggs, अंडे
Chilled water, ठंडा पानी
For Gravy
1 ½ tbsp Oil, तेल
2 Garlic cloves, roughly sliced, लहसुन
1 inch Ginger, peeled, roughly sliced, अदरक
3 medium Onions, roughly chopped, प्याज
1 tbsp Degi red chili powder, देगी लाल मिर्च पाउडर
2 medium size Tomato, roughly chopped, टमाटर
Little water, पानी
Salt to taste, नमक स्वादअनुसार
1 heaped tbsp Coriander powder, धनिया पाउडर
For Finishing Gravy
¼ cup Water, पानी
Prepared Gravy, तैयार की हुई ग्रेवी
1 tbsp Coriander leaves, chopped, धनिया पत्ता
Fried Eggs, तले हुए अंडे
For Frying Eggs
2 tsp Oil, तेल
7-8 hard-boiled Eggs, अंडे
Salt to taste, नमक स्वादअनुसार
1 tsp Degi red chili powder, देगी लाल मिर्च पाउडर
For Garnish
Coriander sprig, धनिया पत्ता
Process
For Boiling Eggs
In a sauce pot, add water as required, vinegar, eggs and give it a boil.
Cook it for 10-12 minutes or until hard boiled. Transfer it to chilled water and remove the shell.
Keep it aside for further use.
For Gravy
In a heavy bottom pan or a kadai, add oil, once it's hot, add garlic, ginger, onions and saute for 3-4 minutes or until the onions are translucent.
Add degi red chili powder, tomatoes, salt to taste and mix well.
Add some water, salt to taste, coriander powder and saute for a minute.
Cover it with the lid and cook until the tomatoes are mushy.
Transfer it to a grinder jar and grind it into a smooth paste.
For Finishing Gravy
In the same kadai, add water, prepared gravy and let it simmer.
Add coriander leaves, prepared fried eggs and cook for 4-5 minutes or until the gravy thickens.
Transfer it to a serving dish and garnish it with coriander sprig.
Serve hot with roti or rice.
For Frying Eggs
In a pan, add oil, once it’s hot, add hard boiled eggs and toss it.
Add salt to taste, degi red chili powder and toss well.
Turn off the flames and keep it aside for further use.

Egg Malai Curry or Egg Malai Masala is a low spice Egg Curry cooked in a creamy gravy without any cream! This unique Egg Curry was first made by Spice Eats and shared on YouTube. An easy to cook recipe that’s tasty as well as healthy.

Ingredients:
Eggs- 4 (boiled, shelled, cut in halves)
Onions - 2 medium, roughly cubed
Green chillies - 2
Ginger-garlic paste - 1 tsp
Cumin (Zeera) powder - 1 tsp
Pepper powder - 1/2 tsp
Garam Masala powder- 1 tsp (Link to our Garam Masala Recipe:
Coriander leaves - 1 bunch ( finely chopped)
Milk - 200 ML
Salt - 1 tsp or to taste
Preparation:
- Boil the eggs & cut into halves
- Put the cubed onions & green chillies into a grinder & blend into a smooth paste
- Fine chop a bunch of coriander leaves
Process :
- In a kadhai, add oil & once medium hot , add the onion-green chilli paste. Lower flame & cook for 2 mins
- Now add the ginger-garlic paste & mix well
- Keep cooking in low flame , stirring often, for around 15 mins till paste changes colour
- Now switch off the flame & add the milk stirring continuously. Mix it well with the Masala
- Switch on the flame & keep in low flame till oil separates
- Put in the cumin powder, pepper powder, garam masala powder & salt . Mix well & cook for a few mins
- Place the egg halves in the gravy, yolk side down to absorb the spices.
- Cover & cook for few mins
- After few mins turn the egg halves yolk side up.
- Add the finely chopped coriander leaves, mix well
- Cook covered for a few mins till oil separates
- Serve, enjoy with rice or roti

DHABA STYLE ANDA CURRY
Preparation time 5-10 minutes
Cooking time 25-30 minutes

Ingredients
For Paste
4 medium Tomatoes, roughly chopped, टमाटर
1 inch Ginger (peeled & sliced) अदरक
3 no. Green chillies, less spicy, हरी मिर्च
½ tbsp Oil, तेल
1 tbsp Tender Coriander stems, roughly chopped, धनिया के डंठल
¼ cup Curd, beaten, दही
1 tsp Degi red chilli powder, देगी लाल मिर्च पाउडर
2 tsp Coriander powder, धनिया पाउडर
For Ginger Garlic Paste
2 no. Green chillies, less spicy & broken into half, हरी मिर्च
5-6 Garlic cloves, लहसुन
½ inch Ginger (peeled & roughly sliced) अदरक
For Dhaba Style Egg Curry
2-3 tbsp Oil, तेल
1 tsp Cumin seeds, जीरा
Prepared Ginger Garlic paste, अदरक लहसुन का पेस्ट
4 medium Onions, finely chopped, प्याज
Prepared Paste, तैयार किया हुआ पेस्ट
1 tbsp Prepared Masala, तैयार किया हुआ मसाला
2-3 cups Water, पानी
Salt to taste, नमक स्वादअनुसार
Sauteed Eggs, तले हुए अंडे
1 medium Tomato, diced, टमाटर
½ small Capsicum, diced, शिमला मिर्च
1 ½ tsp Dry fenugreek leaves, कसूरी मेथी
2 tbsp Coriander leaves, finely chopped, धनिया पत्ता
1 Egg yolk, mashed, अंडे की जर्दी
For Masala
1 ½ tbsp Coriander seeds, धनिया की बीज
4-5 no. Green cardamom, हरी इलायची
1 tbsp Black peppercorns, काली मिर्च के दाने
Salt to taste, नमक स्वादअनुसार
For Sauteing Egg
1 tbsp Oil, तेल
8-9 no. Eggs (hard boiled) उबले हुए अंडे
½ tsp Degi red chilli powder, देगी लाल मिर्च पाउडर
For Garnish
Coriander sprig, धनिया पत्ता
Process
For Paste
In a bowl, add tomatoes, ginger, green chillies, oil, tender coriander stems, curd, degi red chili powder and coriander powder.
Transfer it to a mixer grinder jar and grind it to a smooth paste.
Keep it aside for further use.
For Ginger Garlic Paste
In a mortar pestle, add green chilies, garlic, ginger and grind it corasly.
Keep it aside for further use.
For Dhaba Style Egg Curry
In a handi, heat oil, add cumin seeds and let it splutter.
Add prepared ginger garlic paste, onions and saute it until golden in color.
Add prepared paste and cook it for a while until thick.
Add prepared masala and saute it well.
Add water, salt to taste, sauteed eggs, tomato, capsicum, dry fenugreek leaves and let it simmer for a while until cooked well.
Finish it with some coriander leaves, egg yolk and rest it aside for a while.
Transfer it to a serving dish and garnish it with coriander sprig.
Serve hot with roti.
For Masala
In a bowl, add coriander seeds, green cardamom, black peppercorns and salt to taste.
Transfer it to a mixer grinder jar and grind it to a fine powder.
Keep it aside for further use.
For Sauteing Egg
In a pan, heat oil, add boiled eggs and fry it for a minute.
Add degi red chili powder and cook it well for 2-3 minutes.
Keep it aside for further use.
