Roasted Vegetable Soup Recipe - use up your old vegetables

I make this soup whenever I have some veggies in the fridge that are about to go old. It won’t be the most amazing soup you ever tasted. In fact, it might remind you a bit of baby food?! hahah. But I like it. It’s healthy and packed with nutrients which is great especially since many people around me are catching colds! Add some heavy cream to make it richer and sprinkle some crushed potato chips on top for some added crunch.
Ingredients:
Any vegetables found in the fridge. Here is what I had around:
Bell pepper
Carrots
Kale stems
Garlic
Onion
Zucchini
Heirloom tomato
Olive oil
Chicken broth
Dried thyme
Ground ginger
Mushroom powder
Salt and pepper

1950's Vegetable Soup
No act of love, however small, is ever wasted.
Easy cooking for busy families The recipe is below:
1 lb of ground hamburger or left over roast
1 chopped onion
1-1/2 tsp. granulated garlic OR 2 cloves crushed fresh
1 can diced tomatoes
1 can whole kernel corn
1 can green beans
1 can sliced carrots
1 can english peas
All canned vegetable are added with the juice also in the can
Or add the canned veggies you like
1/2 a can of large tomato juice - add more if needed
1 Tblsp. powdered beef broth
Cook the meat and onion. Add the other ingredients and let simmer 15 or 20 minutes. Add....either elbow macaroni, potatoes, rice or some other type of pasta (just a few handfuls)...cover and let it cook until tender. Test for additional seasoning and enjoy!

-- BASIC BLUEPRINT FOR CREAMY SOUP --
1. SWEAT AROMATICS + GARLIC
▪300g or 3c aromatics (onion, leek, fennel, and/or celery - when in doubt, just use onion ), chopped
▪25g or 4-5cloves garlic, sliced
▪30-40g or 2-3Tbsp fat (olive oil or butter)
Preheat large, heavy bottomed pot over medium low. Add fat (olive oil or butter) then aromatics, garlic, and a pinch of salt and sweat for 15 minutes until translucent, not caramelized.
2. ADD STAR VEG +Add COOKING LIQUID
▪1200g or 8-9c of star veg, chopped (examples: butternut squash, asparagus, peas, celery root with potato, cauliflower, sweet corn)
▪1000g/32oz stock
▪500g/1pint heavy cream
Note: liquids should use a 2 to 1 stock to cream ratio
3. COOK STAR VEG UNTIL TENDER
Increase heat and bring to a simmer. When simmering, reduce heat to medium low to low, cover, and cook until veggies are tender (usually 25-30minutes)
4. PUREE VERY WELL
When veggies are tender, add to blender in batches and puree until smooth. If mixture becomes too thick to blend, add just enough additional stock or water to allow it to blend.
5. STRAIN THROUGH MESH
Pass the mixture through a fine mesh strainer, pressing through with ladle or spatula.
6. SEASON WITH SALT AND ACIDITY
Taste for seasoning then add a strong pinch or 2 of salt and a squeeze of lemon juice. Stir and taste again. Adjust seasoning accordingly.
Top with your favorite garnish. I like fried pumpkin seeds, pepper, and a drizzle of nice olive oil.

- 2 kg Frozen Spinach
- 500g Lamb's lettuce
- 1 cup pretend palm oil
- 1 kg beef
- 600g frozen cod
- 400g shaki (cow tripe)
- 180g shrimps
- 1 big bulb onion (red/white)
- 2 wraps of Knorr cubes (6 small seasoning cubes)
- 150g ham bits
- 1 fresh paprika/sweet pepper/Italian pepper/tribelli pepper
- Black pepper (to taste)
- Salt (to taste)
Note: be careful with the salt, lots of ingredients above already contain salt or have a salty taste naturally.
