Melt in Your Mouth Honey Pumpkin Cookies
It's pumpkin season and nothing screams louder FALL IS HERE, than a pumpkin cookie that melts in your mouth. It will become the best pumpkin cookie you have ever made. People will be shocked you made it with honey in place of sugar. Ingredients: 1 c. unsalted butter room temperature, 3/4 c. Cox's honey, 1 egg, 1 tsp. vanilla, 1 c. pumpkin puree, 1 tsp. baking powder, 1 tsp. baking soda, 1/2 tsp. salt, 1 tsp. cinnamon, 1 tsp. pumpkin spice, 2 1/4 c. flour. Bake 14 minutes at preheated 300°. Optional frosting: beat 1/4 c. unsalted room temperature butter, + 4 oz. softened cream cheese and beat, + 1 1/2 c. powdered sugar, 1 tsp. vanilla. Beat 2 minutes until creamy. Frost with decorator tip. Daughter of a successful beekeeper, Virginia grew up working the bees, packaging honey and helping her dad make deliveries in Southeast Idaho and parts of Utah. In 1978, she reigned as Idaho’s first Honey Queen. She has spent her life educating others about the uses of honey, beeswax and byproducts. She enjoys developing and experimenting with honey-infused recipes. A relatively new hobby includes using social media and her YouTube channel to teach others how to store honey, cook with it, use it in health and beauty products, and many other domestic uses. How to make Honey Pumpkin Cookies! You are going to love this recipe because it is easy and fast. The cookies are fluffy, soft and sweet. I also added walnuts for crunchiness.
I made forty cookies. One baked cookie has a 5cm diameter and 3cm high.
They are perfect for snacks or for party cookies.
Ingredients:
2 ½ cups flour
¼ tsp salt
1 tsp baking powder
1 tsp baking soda
1 tsp cinnamon
⅛ tsp cloves
⅛ tsp nutmeg
2 eggs
140 g sugar
90 g honey
100 ml vegetable oil
1 tsp vanilla extract
1 cup pumpkin puree
¼ chopped walnuts

Лесна и бърза рецепта за прекрасни меденки с тиква. Меденките стават меки, пухкави и сладки. Поръсих ги с орехи за да имат хрупкавост. Пробвайте ги - не струват скъпо и не вземат много време за да се пригтовят.
Продукти:
2 ½ ч.ч.брашно
¼ ч.л.сол
1 ч.л. бакпулвер
1 ч.л. сода бикарбонат
1 ч.л. канела
⅛ ч.л. карамфил
⅛ ч.л. индийско орехче
2 яйца
140 гр. захар
90 гр. мед
100 мл. растително олио
1 ч.л. екстракт от ванилия
1 ч.ч. пюре от тиква (в сайта ми има рецепта за домашно пюре от тиква)
¼ натрошени орехи
Начин на приготвяне:
Загрейте фурната на 190°C.
В средна купа пресейте брашното и добавете солта, бакпулвера, содата, канелата, карамфила и индийското орехче. Разбъркайте добре и оставете на страни.
В друга купа разбийте двете яйца със захарта. Добавете медът и олиото и пак разбийте. След това добавете тиквата и екстракта от ванилия. Отново разбъкваме с миксера. На финала добавяме на части брашното с подправките. Разбъркваме с дървена лъжица. Тестото става лепкаво, но вие не добавяйте допълнително брашно, защото сладките ще станат твърди и ронливи.
С помоща на две лъжици направете малки топки. Във видеото може да видите колко са големи, около половин супена лъжица.
Поръсете ги отгоре с натрошени орехи.
Печете на предварително загрята фурна на 190°C около 10-12 минути.
Аз получих 40 меденки, които изпекох в две тави.

Easy Pumpkin Cookies Recipe
These cookies are soft and chewy with the perfect balance of flavors and are filled with sweet pumpkin puree. The perfect holiday treat.
Ingredients
Butter 180 grams
Flour 585 grams (add gradually)
Baking powder 1 tsp.
Icing sugar 70 grams
Crème fraiche 200 grams
Eggs 2
Ingredients for the filling
Pumpkin puree
Sugar 100 grams
Honey 2 tbsp.
Cornstarch 1 tbsp.
Cinnamon 1 tsp.
Whipped Pumpkin Spice Honey Butter Spread Recipe
Full Recipe -
Ingredients
1 cup salted butter (softened to room temperature)
1 teaspoon pumpkin pie spice
¼ cup pumpkin puree
¼ cup honey
1 teaspoon vanilla extract
Instructions
Add butter and pumpkin pie spice to a medium mixing bowl.
Whisk using a wire whisk or a hand-held bender with a whip attachment until light and fluffy.
Add pumpkin puree, honey, and vanilla, and continue to whisk until combined, about 2 minutes.
Spoon into a bowl or a glass jar for serving. Serve at room temperature.
Notes
To make it vegan, you can replace dairy butter with any plant-based butter.
This recipe can be easily doubled or tripled.
You can replace honey with maple syrup too.

Iced Pumpkin Cookies

Ingredients
2 1/2 cups all purpose flour
1 tsp baking powder
1 tsp baking soda
1 TBSP pumpkin pie spice
1/2 tsp salt
1 1/2 cups butter softened
1 1/2 cups sugar
1 cup pumpkin puree fresh is best, canned if you must
1 egg
1 tsp vanilla
Glaze
1 cup powdered sugar
1-2 TBSP milk
1 TBSP butter melted
Instructions
Preheat your oven to 350°.
Combine your flour, baking powder, baking soda, spices and salt. Set aside.
In a larger bowl, or the bowl of your mixer, cream together the butter and the sugar. Then add in your puree, egg and vanilla until creamy and combined. Add in all of your dry ingredients and mix just until no more flour is visible.
Drop by heaping tablespoon fulls and bake for 12-14 minutes.
Allow your cookies to cool completely and then make your glaze.
Mix together the powdered sugar, melted butter and milk until smooth. You may need a touch more milk. Drizzle onto your cookies and allow to set. Enjoy!
