How To make Holiday Fruitcake Cookies
2 c Sifted all-purpose flour
1/2 ts Baking soda
1/2 ts Salt
1 ts Ground cinnamon
1/2 c Shortening
1 c Packed light brown sugar
1 Egg; beaten
1/3 c Buttermilk
1 pk Diced dates; (8-oz) (see
-note) 1/2 c Chopped nuts
1/2 c Chopped candied red cherries
1/2 c Chopped candied green
-cherries Recipe by: St. Louis Post-Dispatch 12/2/96 Sift together flour, baking soda, salt and cinnamon. Set aside. Beat shortening until light; add sugar and egg, beating until fluffy. Add buttermilk alternately with dry ingredients to shortening mixture; mix well. Fold in dates, nuts, and cherries. Cover bowl with plastic wrap and refrigerate dough until chilled, about 2 to 3 hours. Preheat oven to 375 degrees. Drop dough by teaspoonfuls, about 2 inches apart, onto a lightly greased cookie sheet. Bake about 8 to 10 minutes or until lightly browned. Let cool on wire racks. Note: You can substitute 8 ounces pitted dates, cut into small pieces. Tester's note: Soft, with just the right amount of fruit and nuts. Easy to do; you can make dough one evening and bake after work the next day. These moist cookies keep well. Hilda Tims, McCluer High School. -----

Christmas Fudge:
These cookies you will make this holiday season are going to be like nothing you have ever tried before! Unless you were lucky enough to grow up with them, they will be the best Christmas cookies you will try in your life. Surprisingly they're really easy to prepare and you can bake them right away or make them ahead of time and freeze them. When Christmas comes these warm jewels will be stunning on your dessert table. I will add dark chocolate chunks next time I make these, I think they will be a perfect addition to the sweet fruit and nuts.

Ingredients:
1 & 1/2 sticks butter (softened)
1/2 cup brown sugar
1/2 cup sugar
1 egg
1 tsp. vanilla
1 3/4 cups flour
1 tsp baking soda
1/4 tsp salt
1/3 cup bourbon whiskey
Spices (optional):
1 tsp cinnamon
1/2 tsp nutmeg
1/4 tsp allspice
1/4 tsp ground cloves
1/2 cup walnuts or pecans (or both)
Fruits (optional)
1/2 cup of each
glacé cherries red & Green
candied pineapple
raisins
dates
dried apricots
dried figs
dried peaches
Directions:
Cut the fruit you decide to use into halfs and Soak the fruits in the bourbon. Heat it in the microwave for 1 minute and allow it to sit and soften while you prepare the dough. Cream together the butter and both sugar and add the egg, vanilla and spices. Finish with the flour, salt and baking soda. Add the nuts and fruits including the remaining bourbon if you please and you can either bake the dough right away or form it into a log to chill and slice and bake later.
Bake on a parchment lined baking sheet at 375 F. for about 13 minutes.

350 10 to 12 minutes

1 Cup Shortening
2 Cups Brown Sugar
2 Eggs
1/2 Cup Buttermilk
3 1/2 Cups Flour
1 TSP Baking Soda
1 TSP Salt
1 1/2 Cups Pecans, Chopped
2 Cups Candied Cherries, Halved
2 Cups Pitted Dates, Chopped
Set oven to 400. Mix shortening, brown sugar and eggs well. Mix in buttermilk. Blend flour, salt and baking soda and mix into shortening mixture. Stir in pecans and fruits. Chill dough 1 hour. Drop by tablespoons onto greased cookie sheet and bake 8-10 minutes. Bake until no imprint remains when lightly touched. Cool completely.
