How To make Grilled Steaks w/Garlic Crumbs
2 lb Sirloin Steak
2 1/2 tb Dijon Mustard
1 1/2 tb Dry White Wine
1 t Black Pepper, Ground
2 tb Butter
1 c Garlic, Pressed
1 c Bread Crumbs
1/4 c Parsley, Minced
Preheat the barbecue grill - it is ready when all the coals have an even coat of gray ash. The steak should be at least 1 1/2" thick. Pat the steak dry with paper towels. Mix the mustard, wine and pepper. Spread the mixture on both sides of the steak, using about 2/3 of the mixture. Grill the steaks 5 or 6 inches from the coals, turning once, until medium rare (about 25 minutes total). While the steaks are cooking, heat the butter and garlic together in a heavy skillet and cook for 10 minutes. Add the bread crumbs. Cook over medium-low heat, stirring, until the crumbs are toasted. Brush the top of the cooked steak with the remaining mustard mixture. Press the toasted crumbs onto the top and sides of the steak. Sprinkle with parsley. Serve sliced into 1/2" thick strips. This is my version of NEW YORK STEAK SALAD.

NEW YORK STEAK SALAD
Yield: 2 servings
make the vinaigrette...
1 each shallot, minced
1 clove garlic, minced
2 tsp dijon mustard
2 tsp sugar, granulated
to taste salt & pepper
4 tbsp red wine vinegar
4 tbsp extra virgin olive oil
prepare and plate...
2 each red tomatoes
1/2 each cucumber, hothouse
1/4 each onion, red, sliced
1 each avocado, pitted and diced large
4 oz arugula
10 oz new york steak, usda choice
to taste salt & pepper
2 tbsp canola-olive oil
note:
for this thickness of the steak, sear 1 minute and 30 seconds on each side, then 1 minute on each side, over high heat. make sure to let it rest for 5 minutes before slicing.
to taste shaved parmesan
Note:
Taste before serving. adjust the seasonings with salt and pepper if necessary.

The creamy tomato base of this Creamy Tomato Risotto with Crispy Garlic Crumbs has a hint of lemon that’s just so mouth-wateringly moreish you won’t be able to put your fork down until your plate is clear (and maybe your plate is licked clean too. I, erm, definitely don’t do that.).

The tomato risotto ingredients:
Risotto:
14 oz (400g) tin of chopped tomatoes
1 cup (240ml) vegetable stock
1 tbsp tomato puree/paste
1 tbsp olive oil
1 small onion peeled and finely chopped
1 clove garlic peeled and minced
3/4 cup (150g) Arborio rice
1/3 cup (80ml) white wine optional, replace with stock if you'd prefer
3 tbsp double (heavy) cream
4 tbsp grated parmesan cheese (or vegetarian Italian-style hard cheese if you want it vegetarian)
1 tbsp fresh lemon juice
Good pinch of salt and black pepper
Crispy Garlic Crumbs:
3/4 tbsp butter
1/4 tsp Maldon salt or just a good pinch of normal salt
2 cloves garlic peeled and minced
4 tbsp (30g/1 oz) panko breadcrumbs
1 tsp chopped parsley
Zest of half a lemon
3 tbsp (20g) parmesan (or vegetarian Italian-style hard cheese if you want it vegetarian)

1/2 tsp salt

1/2 tsp chilli sauce
1/2 tsp worcestershire sauce
4 tbsp oil for frying
1 egg
1/2 cup flour
1 cup bread crumbs + 1 tsp cornflour & 1/2 tsp oregano
For sautéed vegetables:
2 potatoes
1 carrot
1 cup broccoli
1/2 cup sweet corns
1 tbsp olive oil
Salt to taste
Black pepper to taste
1 tsp hot sauce
1 tsp honey
1/2 tsp dried mixed herbs
