How To make Greek Feta Bread
1/2 Cup Lukewarm Water
2 Tablespoons Dry Yeast
1/4 Cup Honey
3 1/2 Cups Whole Wheat Or All Purpose Flour
or as needed
1 Teaspoon Olive Oil
1/4 Pound Feta Cheese
2 Eggs
1 Egg White :
beaten
1 Teaspoon Poppy Seeds
In large mixing bowl, combine water, yeast and honey. Let sit in warm place until mixture foams.
Stir in 1 1/2 to 2 cups flour, or as needed to create thick batter, mixing well with wooden spoon. Let batter rise in warm place for 30 minutes.
Stir in oil and enough flour to form kneadable dough. Turn onto lightly floured surface and knead for 5 to 8 min., or until dough becomes elastic and less sticky. Place in clean, lightly oiled bowl. Let dough rise in warm place for 1 hr. Punch down, and let rise again for 30 min. Lightly oil large baking sheet.
On floured surface, roll dough into large rectangle. Crumble the feta cheese into middle, then break eggs onto cheese. Quickly fold up sides of dough, completely enclosing feta and eggs, and pinching edges to seal.
Place loaf on baking sheet, and brush with beaten egg white. Top with poppy seeds. Let loaf rise for 20 min. Bane at 350

It's an easy recipe for a traditional homemade Greek tiganopsomo filled with the flavors of feta cheese, olive oil, oregano and thyme. Kali Oreksi!
The ingredients:
For 4 medium size fried breads (tiganopsoma)
- 250g / 9oz (1 cup) all-purpose flour
- 250g / 9oz (1 cup), feta cheese, crumbled
- 30ml (2 tbsp) extra virgin olive oil*
- 1 tsp dry yeast
- 1 tsp dry oregano
- 1 tsp dry thyme
- 1/2 tsp white wine vinegar
- a pinch of salt
- 125ml (1/2 cup) warm water
- 250ml (1 cup) olive oil for frying*
*You can use vegetable oil instead (in both the dough and the frying), but we strongly believe that the olive oil will make the tiganopsomo taste so much better due to its rich flavor.

The Creamiest Greek Feta Cheese Pie (Bechamel Tiropita)

Ingredients
1/2 pound (#4) phyllo, at room temperature
4 oz (112g) butter, melted
sesame seeds for garnish
For the Filling:
4 tablespoons (50g) butter
4 tablespoons (50g) all-purpose flour
2 cups (500ml) milk
salt, to taste
freshly cracked black pepper, to taste
12 oz (350g) feta cheese
1 egg
Instructions
Preheat the oven to 350 °F, 180 °C. Grease the inside of a 9-inch round pie pan
Make the filling:
Add the butter to a saucepan and melt over medium-heat. Add the flour, whisk together and and cook over medium- heat for 1-2 minutes until toasted.
Add the milk, salt, and pepper, and whisk together. Cook until it comes to a boil and thickens enough to coat the back of a wooden spoon.
Remove from the heat.
Place the egg into a bowl and whisk to break it up. Add some of the hot cream mixture to the egg and whisk together. Add the egg mixture back to the pan and crumble the feta cheese into the sauce. Mix together and taste the cream. Adjust the seasoning if needed.
Assemble the pie:
Unwrap the phyllo sheets and unroll them. Take half of the phyllo sheets and roll them back up, wrap in plastic wrap and store in the refrigerator up to 4 days for another recipe.
Reserve 4 of the phyllo sheets for the top of the pie and layer the remaining sheets into the prepared pie making sure to drizzle each sheet with the melted butter.
Pour the cheese fillinf into the center and top with the remaining 4 phyllo sheets. Drizzle butter between the layers.
Gather all of the phyllo that is extended outside of the pan and tuck it into the sides. Score the top layers into 8 equal portions. Drizzle the remaining butter over the top and sides of the phyllo.
Sprinkle with sesame seeds and bake on the center rack of the preheated oven for about 45-55 minutes or until golden brown.
Allow the pie to set and cool to room temperature. About an hour or longer. Serve with olives. Kali Orexi!
Notes
Freezer Instructions: The cheese pie can be assembled and wrapped tightly with foil and then with plastic wrap as to not absorb any freezer odors. It will keep fresh in the freezer for 2 months.
Bake it frozen and covered with foil in a preheated 350 °F oven for 40 minutes. Remove the foil and bake until golden brown.

Ingredients
1/2 cup (125ml) orange juice
1 cup water
1/2 cup olive oil
1 onion finely chopped
4 scallions, thinly sliced
6 oz (170g) pitted olives
5 oz (150g) feta cheese
3 eggs
1/4 cup finely chopped fresh parsley
3 and 1/4 cups (400g) all-purpose flour
2 teaspoons baking powder
1 teaspoon salt
sesame seeds for topping
Instructions
Preheat the oven to 350 °F, 180 °C.
Grease the inside of a 9-inch (23 cm) springform pan.
Add the onion to a pan with 2-3 tablespoons olive oil and a pinch of salt and cook over medium heat until soft and golden.
Add the scallions and cook for 2-3 minutes until softened. Set the pan aside.
Ina. mixing bowl, combine the flour, salt, and baking powder. Whisk together.
In another large mixing bowl combine the olive oil, juice, water, and eggs and whisk together.
Add the flour mixture to the oil mixture and whisk until combined.
Fold in the olives, feta, and the cooked onions and scallions along with the parsley.
Transfer the batter to the prepared pan and top with sesame seeds.
Bake on the center rack for about 55 minutes or until a toothpick inserted in the center of the cake comes out clean.
Allow the cake to cool completely and remove from the pan.
