Pressure Cooker Express: Braised Chicken Thighs With Green Olives
This tender pressure cooker chicken will melt right off the bone. As an added bonus, the aromatic spices will leave your kitchen smelling amazing!
Ingredients:
• 4 bone-in, skin-on chicken thighs (about 2 lb) (908g)
• 1 tsp ground cumin
• 1 tsp kosher salt
• ½ tsp freshly ground black pepper
• ¼ tsp ground cinnamon
• ¼ tsp ground turmeric
• ½ tsp olive oil
• 1 small yellow onion, thinly sliced
• 3 garlic cloves, thinly sliced
• ¾ cup low-salt chicken broth (177g)
• 2 Tbsp dry white wine (30g)
• ½ cup pitted green olives (90g)
• 2 Tbsp fresh lemon juice (32g)
• Finely chopped fresh parsley, for garnish (optional)

Baked Orange Chicken
Ingredients:
Red Onion
Salt
2 Garlic cloves
18 oz of frozen condensed orange juice
1 cup of dried apricots
3-4 teaspoons of turmeric
3-4 teaspoons of paprika
2-3 teaspoon of cinnamon
1/4 teaspoon of cumin
2 tablespoons of Soy sauce
1/2 cup of rose
Coconut milk
Chop the red onion and saute in an oven-safe pan (cast iron) with avocado oil
Add a pinch of salt
Coarse chop the garlic and add it to your pan, then mix
Add the chicken on top of the onions, starting with the dark meat
Cut the dried apricots as the chicken is searing
Season the chicken with 2 teaspoons of salt, 2 teaspoons of turmeric, 2 teaspoons of paprika, 1 teaspoon of cinnamon, and 1/4 teaspoon of cumin
Once the first side of the chicken is nicely seared, flip it over
Add seasoning to the other side of the chicken: 1 teaspoon of each seasoning except cumin
Then add the apricots on top
Add the rest of the chicken (white meat) on top
Add 2 tablespoons of soy sauce
Add more turmeric, paprika, cumin, and cinnamon on top of the white meat
Add 1/2 a cup of Rose and enough coconut milk to cover half of the chicken
Add the condensed orange juice on top
*the dark meat sits at the bottom since it takes longer to cook*
Place your pan in the oven and close with a lid
Bake at 450 degrees for about 2 hours. Check it after the first hour. Mix it and taste to see if it is seasoned to your liking

What’s cooking in this episode? I have for you my version of Broiled Orange Cumin Chicken Thighs. I used orange juice concentrate, honey, tomato paste, parsley, and cumin in my marinate mixture for the chicken thighs. Enjoy this sweet and tangy dish.

Ingredients:
* chicken thighs
* garlic
* parsley
* orange juice concentrate
* olive oil
* honey
* tomato paste
* cumin
* salt
* pepper
Recipe:
Step 1 - Add orange juice concentrate, olive oil, honey, cumin, garlic, parsley, tomato paste, salt, and pepper in a large bowl. Stir. Add in the chicken thighs. Coat the chicken with the mixture. Marinate for at least 30 minutes.
Step 2 - Arrange the marinated chicken thighs in a baking tray lined with tin foil. Brush the remaining marinade onto the chicken.
Step 3 - Broil the chicken thighs for 15 minutes on each side in the oven.
Step 4 - Remove from the oven. let the broiled chicken thighs rest.
This dish is good to plate.

To brine the chicken
