Easy Pepper and Cheese Pie
A simple pie with sweet peppers and cheese - crispy fragrant shortbread dough and juicy delicious filling. The pie is good both warm and cold. It can be used as an independent dish or addition to the first and second courses.
In 100 g - 264 kcal
Ingredients:
Dough
Flour - 180 g
Vegetable oil - 60 g
Water (boiling water) - 60 g
Baking powder - 4 g
Salt - 2 g
Filling
Feta - 250 g
Pickled sweet pepper - 150-200 g
Greens - 2-3 tablespoons per
Hot pepper to taste
Eggs - 2 pieces
Sour cream 15-25% - 100 g
Salt pepper to taste
Cooking
1. Dissolve salt in boiling water.
2. Mix flour with baking powder. You can use whole grain wheat.
3. Add vegetable oil and hot salt water. Knead the most homogeneous dough that does not stick to your hands.
4. Cover the bowl with plastic wrap and leave for 30 minutes.
5. For the filling, combine chopped cheese, hot peppers, if desired, herbs and pickled or blanched sweet peppers. You can use any cheese, and I will leave a link to the recipe for quick pickled peppers in the description.
6. Roll out the dough on baking paper into a cake with a diameter of 30 cm. Put the filling on the center, smooth it out, not reaching the edge. Wrap the free edge of the dough towards the center and make tucks. Move paper to a baking sheet.
7. Combine eggs with sour cream, if you use unsalted cheese, be sure to salt and pepper to taste. Pour the mixture over the filling in an even layer.
8. Bake in an oven preheated to 190 ° C at an average level without convection for 35-40 minutes until golden brown.
9. Cool slightly and serve

INGREDIENTS:
1 14-oz (396.9g) package frozen puff pastry
1 egg yolk, beaten
6 oz (169.5g) pepper jack cheese, cut into 30 uniform pieces, each about ¼ inch thick
1 Fresno chili, sliced into thin rings
1 serrano chili, sliced into thin rings
Salt and pepper, to taste
2 tablespoon (3.4g) fresh rosemary, finely chopped
Optional: 3 tablespoons (45g) sambal or savory chili jam to serve
INSTRUCTIONS:
1) Preheat oven to 400°F (204°C) and line a baking sheet with parchment paper.
2) Remove the puff pastry from the freezer and gently roll out on a lightly floured surface. Score and cut into 30 pieces, each about 2-inches long, then arrange half on the baking sheet. Store the other half in the fridge until ready to bake.
3) Dock each piece of puff pastry 3-4 times along the length, then cover with another sheet tray–this will keep them from rising too much. Par-bake these for 10 minutes.
4) Remove the puff pastry from the oven, uncover and wash each piece with the beaten egg yolk, then top with a slice of pepper jack cheese and one slice of each of the peppers. Season with a generous pinch of salt and pepper.
5) Return the bites to the oven and continue baking uncovered until the pastry is golden and crispy and the cheese has melted, another 6-8 minutes. Once done, repeat with the remaining pastry from the fridge.
6) Garnish with the chopped rosemary and a small dish of the sambal and serve.

Cacio e Pepe translates from Italian literally to cheese and pepper. It is an adored pasta dish featuring those two star ingredients, but I use it here on one of my favorite breads and have been making this side dish for many company meals for years. It's too wonderful not to share.
