How To make Ginger Tofu Dressing
FROM ESTELLA DOLL (NXXS13B:
1/2 ts Ginger, finely grated
8 oz Soft tofu
1 ts Sea salt (coarse salt)
1/4 c -Water
1 tb Sesame oil
2 tb Brown rice vinegar

Sesame Ginger Tofu
1 (14 ounce) block extra firm tofu, drained and pressed
4 tablespoons low sodium soy sauce
1 tablespoon tahini
1 teaspoon grated ginger
1 teaspoon grated garlic
Place marinade ingredients in a bowl and mix well. Slice tofu into 8 pieces and place in a glass dish or plastic bag with marinade. Marinate for 15 minutes. Bake in the air fryer at 375 degrees for 15 minutes or for 25 minutes in a 400 °oven or until desired doneness.
Tommie’s Teriyaki sauce
Tamiko (Tommie) was my Japanese mother. She always kept a jar of her homemade teriyaki sauce in the refrigerator.
½ cup mirin
½ cup soy sauce
¼ cup sugar (or any dry sweetener you prefer)
1 clove garlic
Place ingredients in a small saucepan. Bring to a boil and simmer until reduced to a slightly thick glaze. Strain out the garlic. This sauce will keep for months in the refrigerator.

-Avocado Ponzu Hiyayakko-
½ Avocado, thinly sliced
1 block solft silken tofu
1 Tbs ponzu sauce
1 Tbs tobiko (sub with masago or ikura)
1 shiso leaf, julienned
-Soy Cured Eggs Hiyayakko-
Curing mixture:
¼ cup (150ml) mirin
¼ cup (150 mil) soy sauce
1 tsp grated ginger
1 clove garlic, grated
pinch togarashi
1-2 egg yolks
1 block
Small bunch raddish sprouts
1 Tbs chopped chives
pinch of yuzu kosho (optional)
-Soy Ginger Katsuobushi Hiyayakko-
1 Tbs soy sauce
1 tsp white sugar
½ tsp dashi granules
½ tsp water
1 tsp grated fresh ginger root
1 (12 ounce) package silken tofu
¼ teaspoon thinly sliced green onion
1 pinch bonito shavings (dry fish flakes)
-1 pinch toasted sesame seeds
