1 1/2 tb Cornstarch
2 tb Grand marnier
Or other orange liqueur Blueberry glaze: 1/2 c Fresh blueberries

1/4 c Sugar
1/4 c Kirsch
1 1/2 tb Cornstarch
3 tb Water

StrAWBERRY GLAZE Mash strawberries. Combine strawberries, sugar and cornstarch in a heavy saucepan; stir well. Cook over medium heat until thick, stirring constantly. Stir in NOTE: If desired, Blueberry Glaze may be substituted for the whole strawberries and Strawberry Glaze. BLUEBERRY GLAZE Combine blueberries and 1/4 cup water in a heavy saucepan; cook over medium heat, stirring constantly, 15 minutes or until berries are very soft. Press through a
sieve, and return to saucepan. Stir in sugar and kirsch; cook over medium heat 10 minutes, stirring often, or until slightly thickened. Dissolve cornstarch in 3 tablespoons water; add to blueberry mixture. Cook, stirring constantly -----

Sue has a very tasty idea! Today we’re gonna cook a half fruit and a half jelly fluffy cheesecake. But it's not just a common desert!
First comes the batter for the sponge cake. We need three eggs and 75 grams of sugar, and a pinch of salt. Then we’ll add some vanilla extract and 20 grams of honey and mix it all up! Do it well, so that no sugar clumps are left. The next step is to warm this egg mixture up to 38-42 degrees Celsius. A quick tip: you can place the bowl with the batter on a bowl with hot water. And mix it again using a hand mixer. Next, we’ll add the 30 millilitres of milk, 95 grams of flour, 30 grams of unsalted butter. And mix it properly. The batter is ready and we can finally bake it. You can bake it at 160 degrees Celsius for half an hour to get a fluffy sponge cake. Then we need to cut it into 4 round pieces. Ask an adult to help you with it!
Then it's the frosting's turn! We mix 270 grams of cream cheese with 160 grams of unsweetened yogurt and 95 grams of sugar. Then we add 5 millilitres of vanilla extract and 10 grams of lemon juice. And mix everything up! Don’t forget to add 7 grams of powdered gelatin and 35 grams of water, because the melted gelatin makes the frosting thicker. The final step is to add 50% whipped heavy cream.
After that we can finally put our cake together using a special pan. We'll put different types of fruit on each layer and place it in the fridge for 2-3 hours. We have one more stage! Сover the whole cake with fruit and pour a special lemon gelatin mixture, then place it in the fridge for 2-3 hours. The cake is ready!

This super moist FRUIT CAKE recipe completely changed my mind about fruit cake!

Never in a million years did I think fruit cake would make it to my top 10 favourite cakes of all time! I literally despised fruit cake growing up, always finding it too dry or having too many sultanas. UNTIL I developed this super moist fruit cake recipe that is packed with fruit, nuts, dates and so much more!
INGREDIENTS LIST:
For accuracy, I would recommend using the gram measurements provided as those are the exact quantities I use. Cup measurements are given as estimates (based on US cup measurements) to make it easier for those who do not have a scale.
Fruit Cake
▢¾ cups (170 g) unsalted butter
▢¾ cups (150 g) soft brown sugar
▢2 cups (350 g) dried fruits - I used a combination of sultanas, raisins, currants, red and green glace cherries and citrus peel (see note 1 on blog post)
▢½ cup (100 g) dates - pitted and cut into small pieces, see note 2 on blog post
▢⅔ cups (166 g) store bought sweetened orange juice - like Just Juice, Tropicana etc.
▢1½ tbsp orange zest - the zest of about 1 medium sized orange. The juice of the orange will be used later in the syrup.
▢2 tbsp (36 g) molasses
▢1¾ cups (210 g) all purpose flour
▢1½ tsps baking powder
▢½ tsp salt
▢1½ tsps cinnamon powder
▢½ tsp ground ginger powder
▢¼ tsp nutmeg
▢1 tsp all spice
▢¼ cup (52 g) unflavoured vegetable oil - I use canola oil
▢3 large eggs
▢1 cup (100 g) walnuts - halved
Orange Syrup/Glaze
▢3 tbsp (50 g) freshly squeezed orange juice
▢1¾ tbsp (20 g) white granulated sugar

Strawberry Jell-O Glaze:
►2 cups of Water
►½ cup Sugar
►2 tablespoon Cornstarch
►2 tablespoon Strawberry Jell-O
►In a saucepan add the water, sugar and cornstarch. Mix well.
►Let this boil for 5 minutes then turn off the heat and add the Jell-O and mix well.
►Let this cool and put it in the refrigerator for 30 minutes before using.
