Cashew Meringue Wafers:
12 large egg whites (room temperature) [360 g]
1 tsp cream of tartar [3.4 g]
3/4 cup granulated sugar [150 g]
1/2 cup powdered sugar [60 g]
1.5 cups toasted cashews [225 g]
1/4 cup cornstarch [30 g]
1 tsp vanilla extract [5 mL]
White Chocolate Cream Layers:
1 cup heavy cream, divided [240 mL]
3/4 cup (4.5 oz) white chocolate chips [127.4 g]
Milk Chocolate Cream Layer:
1/2 cup heavy cream, divided [120 mL]
1/3 cup (2 oz) milk chocolate chips [56.6 g]
1/8 tsp kosher salt [0.8 g]
2 tsp brandy (optional) [10 mL]
Dark Chocolate Shell:
1 cup (6 oz) bittersweet chocolate baking wafers (or chips) [169.8 g]
1 1/3 cups coconut oil (sub: butter) [320 mL]
Dark Chocolate Ganache:
1/2 cup heavy cream [120 mL]
4 tbsp granulated sugar [50 g]
1 1/3 cups (8 oz) bittersweet chocolate baking wafers (or chips) [226.4 g]
2 tsp brandy (optional) [10 mL]
1/4 cup warm milk (as needed) [60 mL]
Dark Chocolate Cage Wrap:
1/2 cup (3 oz) of bittersweet chocolate baking wafers (or chips) [84.9 g]
Topping:
2 tbsp Dutch process cocoa powder [11.6 g]

Frozen Cheese cake
Recipe in English:
Ingredients:
-Wheat biscuits 20
-Butter melted 3tbs
-Cream cheese 1cup
-Icing sugar 1/2cup
-Vanilla extract 1/2tsp
-Mango ice cream half pack
-Strawberry ice cream half pack
-Topping for decoration
Directions:
-Put all the biscuits in a food processor and pulse until crumbled, but not too fine.
-Add melted butter and process until combined and take out from food processor.
-Press biscuit mixture evenly over base of ice-cream bowl and freeze for 15mins.
-In separate bowl, add cream cheese, icing sugar and vanilla extract, whisk well to combine, set side.
-Add half pack of vanilla ice cream and half cream cheese in a bowl and fold together quickly.
-Repeat same procedure with strawberry ice-cream.
-Now pour this ice cream mixture into the prepared bowl over the biscuit layer and freeze for 2 hours.
-Decorate with toppings (any of your choice).
-Serve chilled and enjoy.

-Alag bowl mein cream cheese,icing sugar aur vanilla extract dal ker ache tarhan whisk karein aur side per rakh dein.
-Bowl mein half pack vanilla ice cream aur half cream cheese dal ker foran fold kerlein.
-Same yehe procedure strawberry ice cream k saath karein.
-Ab ice cream mixture ko pehlay sa tayyar biscuits layer bowl mein dal dein aur 2 hours kliya freeze kerlein.
-Topping k saath decorate karein.
-Thanda serve karein.

-3/4 cup Graham Cracker Crumbs
-2 Tbsp Sugar
-3 Tbsp Melted Butter
Tips:
*Grease your pan well and line with parchment paper to prevent sticking- I recommend either a 6 inch cheesecake pan or springform pan, the push-up pan I used can be found here:
*Bake for 8 minutes at 350 Fahrenheit
???? Cheesecake Filling *All ingredients at Room Temperature!
- 2 8 oz. packages Cream Cheese, softened
- 7 oz sweetened Condensed Milk
- 1/4 cup Sour Cream
- 1 Tbsp Flour
- 1 Tbsp Corn Starch
- 2 Eggs
- 1 Tbsp Clear Vanilla
❤️ Tips:
*Make sure all ingredients are at room temperature! This is key to preventing cracks from forming in your cheesecake
* Use a waterbath by heating your water, and placing the cheesecake inside or two pans. Fill the outer edge with your water- being careful not to get any water under your cheesecake pan (can make your crust soggy)
* Depending on your oven, bake for 1 hour 15 mins- 1 hour 30 mins at 325 Fahrenheit- it will be done when it is mostly firm with a slight jiggle to the center, no browning
* Turn off the heat and keep your oven door open for 1 hour before taking your cheesecake out! Let it sit
*Chill your cheesecake overnight before removing from pan- this is important for keeping the cheesecake as firm as possible
* Slice your cheesecake into 8 triangles and insert wooden popsicle sticks about halfway through each cheesecake slice
* Once sticks are inserted, freeze slices for at least 3-4 Hours before dipping
???? Chocolate Coating
- 7.5 oz Lindt White Chocolate Bar, chopped
- 7.5 oz Ghirardelli White Chocolate Melting Wafers, chopped
- 4.5 Tbsp Coconut Oil
- Red and Blue Powder Food Coloring
- *Strawberry Flavoring if desired
???? Tips:
* This coating is not recommended for dipping strawberries! It is extra runny and is special for dipping frozen dipped treats
* Microwave for 1 round of 30 seconds and stir, then microwave in 10 second intervals until completely smooth, stirring continuously
* Make sure that your chocolate does not reach above 90 degrees- to prevent this I always use an infrared thermometer:
* Dip and apply sprinkles immediately, the magic shell sets very quickly once it makes contact with the frozen cheesecake! (:
* Be creative with flavorings! I used strawberry flavoring for the red chocolate, blueberry flavoring would also be great for the blue!

Dark Chocolate Cheesecake Bars
Ingredients:
- 100g DLA Santo Tomas 70% Dark Chocolate Couverture
- 100g Cream cheese
- 30g Granulated sugar
- 100ml Heavy cream
- 3g Gelatin powder
- 120g DLA Coklat Dark Chocolate Compound
Preparation:
- Bring the the cream cheese to room temperature.
- Soak the gelatin powder in 1tsb water and set aside.
Method:
1. Put the DLA Santo Tomas 70% Dark Chocolate Couverture in a bowl, add warmed heavy cream, and mix to melt the chocolate. Microwave for a few seconds if needed.
2. In a bowl, mix the cream cheese and granulated sugar with a whisk.
3. Add in the chocolate mixture.
4. Dissolve the soaked gelatin powder in a double boiler and add it to the mixture.
5. Pour the mixture into a molder and chill in the refrigerator for 2 hours to set.
6. Dip into melted DLA Coklat Dark Chocolate Compound for coating. Drizzle with more melted dark chocolate for decoration.
Recipe makes 4 dark chocolate cheesecake bars. Enjoy!
