How To make Fri Dinner: Bananas In Caramel Sauce
1/2 c Granulated sugar
2 tb Water
1/2 c Pineapple juice, or orange
2 tb Butter
3 tb Rum
1 tb Lemon juice
1/2 ts Cinnamon
6 Bananas
6 sm Scoops vanilla ice cream
In large deep skillet, heat sugar with water over medium heat, watching carefully, until sugar melts and starts to turn a caramel colour. Gently stir in pineapple juice and butter, bring careful because mixture will bubble up. Add rum, lemon juice and cinnamon; cook, stirring, for 4-5 minutes or until smooth. [Sauce can be cooled, covered and refrigerated for up to 12 hours; reheat gently.] Cut bananas into 1-inch thick slices; add to sauce and heat through. Serve over ice cream. This dense pudding has the flavour of bananas and caramel sauce in each bite.
BANANA PUDDING WITH CARAMEL SAUCE
Ingredients
1 banana
125 grams refined flour
115 grams castor sugar
3 teaspoons baking powder
1 egg
85 grams melted butter
1 teaspoon vanilla essence
250 ml milk
Caramel sauce
10 grams brown sugar
2 teaspoons honey
Method
1. Preheat oven at 200ºC.
2. Sieve flour, castor sugar and baking powder in a bowl.
3. Peel and mash the banana in a bowl. Add egg and whisk. Add butter and whisk. Add vanilla essence and whisk well. Add it to flour mixture and mix. Add milk and mix well.
4. Pour the mixture into glass baking tray.
5. To prepare caramel sauce, heat brown sugar in a non-stick pan. Add 2 tablespoons water and honey, mix and cook for 3-4 minutes.
6. Pour the caramel sauce over pudding batter. Place the baking tray in preheated oven and bake for 40 minutes.
7. Cut and serve.
Preparation Time: 10-12 minutes
Cooking Time: 45-50 minutes

Ingredients for 12 pancakes:
240 g all-purpose flour
2 eggs
1 tsp baking soda
1 ½ tsp baking powder
1 tsp vanilla
250 ml milk
250 g yogurt
40 g melted butter
¼ tsp salt
2 bananas
60 g brown sugar
For the chocolate caramel sauce:
200 g brown sugar
100 ml water
250 ml heavy cream
150 g dark chocolate 60%
40 g butter
½ tsp smoked sea salt flakes* optional

BANANA CARAMEL SPLIT | AUSSIE GIRL CAN COOK
this banana split is a real treat. easy to make serves 4. recipe written below
caramel sauce
mix 1 table sp arrowroot flour and 1 table sp water set aside
med saucepan
1/2 cup brown sugar firmly packed
1/2 cup caster sugar
1/2 cup water
med heat stir til simmering stop stirring simmer 8 mins
take off heat and add
400ml coconut milk
and arrowroot mix..mix well put back on heat once starts to simmer takes 30 seconds to thicken slightly. take off heat
mix in
20 g butter til melted. set aside til needed
4 med firm bananas cut longways
mix 1 cup shredded coconut and 2 table sp dry bread crumbs
whisk 2 eggs
plate with flour
oil for deep frying and paper towel
dust bananas in flour then egg then coconut
fry in hot oil aprox 3 mins til golden brown drain on paper towel
serve hot with ice cream flaked almonds and the sauce. yer baby
serves 4
