How To make Pumpkin Ice Cream Pie with Caramel Pecan Sauce
1 1/2 c Gingersnap cookies; crushed
1/4 c Butter or margarine; melted
*filling* 1/2 ts Cinnamon
1 pt Vanilla ice cream; softened
3/4 c Brown sugar
1/2 ts Ginger
1/2 ts Cinnamon
1/4 ts Cloves
1 c Pumpkin
1 c Whipping cream; whipped
*sauce* 1 c Caramel ice cream topping
1/2 c Pecans; chopped
Recipe by: Sue Klapper In small bowl, combine crust ingredients; blend well. Press firmly in bottom and up sides of 9 inch pie pan. Refrigerate 10 to 15 minutes. Meanwhile, in large bowl stir 1/2 teaspoon cinnamon into
ice cream. Spoon into crust. Freeze. In medium bowl, combine brown sugar, ginger, 1/2 teaspoon cinnamon, cloves and pumpkin; blend well. Fold in whipped cream. Spoon over ice cream in crust. Freeze 3 hours or until firm. Let stand at room temperature 15 to 20 minutes before serving. In small saucepan, combine caramel topping and pecans. Cook over medium heat until thoroughly heated, stirring constantly. Serve warm over pie. -----

Easy Caramel Sauce

Ingredients
1 packed cup brown sugar
1/2 cup half-and-half
4 tablespoons butter
Pinch salt
1 tablespoon vanilla extract
Directions
Mix the brown sugar, half-and-half, butter and salt in a saucepan over medium-low heat. Cook while whisking gently for 5 to 7 minutes, until it gets thicker. Add the vanilla and cook another minute to thicken further. Turn off the heat, cool slightly and pour the sauce into a jar. Refrigerate until cold.

Caramel Pecan Cheesecake Pie!!
Caramel Pecan Cheesecake Pie
INGREDIENTS
1 sheet refrigerated pie crust
1 package (8 ounces) cream cheese, softened
1/2 cup sugar
4 large eggs, room temperature
1 teaspoon vanilla extract
1-1/4 cups chopped pecans
1 jar (12-1/4 ounces) caramel ice cream topping
Additional caramel ice cream topping or syrup, abd whipped cream optional
* Preheat oven to 375°.
* Line a 9-in. deep-dish pie plate with crust. Trim and flute edges.
* In a small bowl or stand mixer, beat cream cheese, sugar, 1 egg and vanilla until smooth.
* Spread into crust; sprinkle with pecans.
* In a small bowl, whisk remaining eggs; gradually whisk in caramel topping until well mixed.
* Pour slowly over pecans and cheesecake layers.
* Bake 35-45 minutes or until lightly browned
* Cool for 1 hour. Refrigerate overnight before slicing. If desired, garnish with additional caramel ice cream topping and whipped cream.
