How To make Fresh Tomatillo Salsa
ALL QUANTITIES APPROXIMATE:
8 To 16 Tomatilloes depending
On size. 12 Chiles (2_Serranos +
2 _Jalapenos + 8_Piquins) I
Typically use The serranos and jalapenos Green and the piquins red. 4 Cloves Garlic
1 sm Onion, really small, or half
Medium onion. 1/2 ts Salt
1/4 c Cilantro
Roast above ingredients in a[n oil-free] cast iron pan, turning occasionally. Leave husks on tomatillos while you roast 'em. The husks will be nicely blackened, the skins translucent, and the fruits soft when they're done. [Let me add: the goal is to blacken the skin while doing the least tomatillo-exploding that you can. That way they don't lose juice into the pan, that burns and smells sometimes. That means moving them around the pan as they roast.] Put roasted vegetables in food processor with: Salt 1/2 Teaspoon Cilantro 1/4 Cup and process briefly. Transfer to a pot, and cook the mixture for 5 minutes. [This darkens it up a bit, and mellows the flavors. Canning Roasted Salsa Verde - Authentic Green Salsa Recipe & Full Walkthrough
Another salsa video! Today we're making a very special roasted salsa verde. With beautiful fresh ingredients, including a mountain of Tomatillos, we'll go through every step of making this salsa, including roasting the vegetables. Then we'll can it all in a bunch of pint mason jars with the hot water bath canner. See below for the full recipe.

Here's the basic recipe:
8 lbs tomatillos
4 medium white onions
3 large jalapeños
2 serrano peppers
12 cloves garlic
1/2 cup fresh cilantro (coarsely chopped)
1/2 cup lime juice
2 teaspoons salt
1 teaspoon black pepper
Remove husk from tomatillos and rinse them. Peel and cut onions into eighths. Peel garlic cloves. Arrange all vegetables onto foil-lined baking sheets, and roast at 425 degrees F in the oven. After 15 minutes, remove the garlic, and continue roasting the other vegetables until they begin to develop a light char.
Transfer all roasted vegetables and garlic to food processor and puree. Pour puree into stock pot, and add remaining ingredients (cilantro, lime juice, salt, pepper). Simmer for 10-20 minutes, or until desired consistency is reached.
This recipe makes about 6 pints of salsa. Sterilize jars and lids. Fill jars with salsa, de-bubble, and wipe jar rims. Put lids and rings on jar, and place into hot water bath canner. Fill canner with enough water to cover the jars completely. Heat water to boiling. At this point, process 20 minutes. After processing, remove jars from canner and place on counter. Leave undisturbed for a day. Refrigerate jars after opening.

Green Salsa Verde Recipe | EASY Tomatillo Dip!

LAY HO MA!! This recipe is going to up your salsa game to the next level. Using tomatillos is not as intimidating as you may think. Whether its game day, super bowl, or you just have a big bowl of corn chips to finish - this tomatillo salsa will change your life. Join me in this episode and learn how to make an easy green salsa verde.
Ingredients:
1 lb tomatillos
2 jalapeño peppers
2 poblano peppers
1 large shallot
2 pieces garlic
1 cup roughly chopped cilantro
1/2 tbsp pink salt
splash of lime juice
Directions:
1. Peel the outer layer of the tomatillos and give them a good rinse
2. Score the bottom of the tomatillos with a knife. This will prevent them from bursting in the oven ****IMPORTANT!
3. Place the tomatillos onto a baking sheet
4. Remove the seeds from the peppers, cut them in half, and place them onto the baking sheet
5. Place them in the oven, broil on low for 5-6min or until your desired char
6. Once your char is done, transfer all the ingredients to the blender
7. Blend on medium to retain some texture. Serve and enjoy!
