안녕하세요. 조꽁드 입니다.
이번 주는 무화과로 케이크를 만들어 보았습니다.
붉은 껍질의 달달한 홍 무화과와 라즈베리를 섞어 퓨레를 만들었습니다.
프랑스 쉐프 크리스토퍼 미셀락이 무화과에 화이트와인과 라즈베리를 섞어 콩피를 만는 레시피를 보았습니다. 정말 벨벳 같은 식감의 무화과가 약간의 상큼한 라즈베리를 섞었더니 정말 묘하게 맛있었습니다.
그런데 무화과에는 단백질 분해 효소인 피신(Picin) 이라는 효소가 있습니다.
이효소는 오래 끓이면 성질을 잃는다지만 제가 해본 바로는 끓여도 젤라틴으로 응고 시킬 수 없었습니다. 그래서 펙틴을 사용해야 합니다. 펙틴은 설탕과 함께 끓이면 겔화됩니다.
0.5~ 1% 정도 양의 펙틴을 설탕에 섞어 사용합니다.
펙틴을 이용해도 젤라틴 만큼 단단하게 굳지는 않습니다.
단 차가운 케이크 속에서는 형태를 유지 합니다.
여기에 아담하면서도 속살이 너무 예쁜 청 무화과로 장식을 하였습니다.
특히 청 무화과는 맛도 좋은데 사이즈 나 모양이 케이크 옆면을 장식하기에 딱 좋았습니다.
홍 무화과와 청 무화과는 종류가 약간 다릅니다. 크기도 맛도 속 모양도 조금씩 다르답니다.

HI! I am Joconde.
This week, I made a fig cake.
I made the Fig puree by mixing sweet purple figs and raspberrie puree.
I saw a recipe for French chef Christopher Michalak to make confit by mixing figs with white wine and raspberries. This really velvety fig turned out amazingly delicious.
However, figs contain an enzyme called Ficin, which is a proteolytic enzyme.
This enzyme loses its properties if it is boiled for a long time. I have tried, but it could not set the fig puree.
So I had to use pectin. Pectin gels when boiled with sugar.
Use 0.5 to 1% of pectin mixed with sugar.
Even if you use pectin, it does not set as hard as gelatin.
However, in a cold cake, it retains its good shape.
Here, I decorated it with green figs that are small but very pretty.
The greed figs taste good, and the size and cut section were just perfect for the decoration of the cake.
Purple figs and green figs are slightly different in size, taste, and shape.
It was a fun time making cake with good figs.

The acrylic ring I used when assembling the cake was custom order.
It had appeared in my videos before.
Because it is transparent, it is convenient to use it when making a ‘Fraisier’ style cake decorated on the side.

Ingredients
1 pound (453g) dried figs
4 cups hot water
The Dry Ingredients:
3 c (400g) all-purpose flour
1 tablespoon baking powder
1 teaspoon ground cinnamon
1/4 teaspoon ground cloves
1/4 teaspoon salt
1 cup chopped walnuts
The Wet Ingredients:
1 cup (240g) tahini
1 and 1/2 cups (315g) granulated sugar
1/2 cup (125ml) vegetable oil
1/2 cup (125ml) orange juice
1 cup fig water
flax egg substitute: 1 tablespoon finely ground flax seeds plus 3 tablespoons water
1 teaspoon baking soda
2 teaspoons pure vanilla extract
The Glaze:
1 and 1/2 cups confectioner's sugar
3-4 tablespoons orange juice
Instructions
Preheat the oven to 350 °F, 180 °C.
Spray the inside of a 9 by 13-inch (23 by 33cm) baking pan with baking spray.
Place the dried figs in a pitcher and pour 4 cups of steaming hot water over them. Set aside.
In a mixing bowl, combine the dry ingredients together (except for the walnuts) and whisk them together.
In a large mixing bowl, combine the wet ingredients together. Whisk until smooth.
Lift the figs out of the hot water. Pour 1 cup of the fig water into the wet ingredient mixture and whisk together.
Cut the hard stem tips off of the figs and disgard. Chop the figs into smaller pieces.
Add the dry ingredients to the wet ingredients in 3 batches. Toss the walnuts in the final batch of dry ingredients and add to the batter.
Using a spatula fold in the chopped figs.
Pour the batter into the prepared pan and bake on the center rack for about 35-45 minutes. The cake is done when a toothpick inserted into the center of the cake comes out clean or with moist crumbs attached.
Allow the cake to cool completely while you prepare the glaze: Combine the glaze ingredients together in a mixing bowl and whisk them together until smooth.
Drizzle the glaze over the cooled cake and serve. Kali Orexi!
Notes
Dates can be substituted for the figs. If using dates, do not soak them in water. Add extra orange juice to the cake in place of the fig water.
