►1 cup (16 Tbsp or 226 grams) unsalted butter, softened
►1/2 cup sour cream
►3 egg yolks, room temperature
►2 1/2 cups all-purpose flour (315 grams) *measured correctly

INGREDIENTS FOR THE COOKIE DOUGH:
►14 Tbsp (1¾ packages) unsalted butter, softened at room temp
►2 Tbsp white sugar
►2 cups all-purpose flour (I used bleached Gold Medal)
►1 tsp baking soda
►2 egg yolks
►2 Tbsp sour cream

►2 egg whites
►¾ cup white sugar

低筋麵粉 100g
無鹽奶油 50g
蛋液 25g
糖粉 50g
牛奶 5g
可可粉 15g
杏仁片 70g
Ingredients:
Cake flour 100g
Unsalted butter 50g
Egg liquid 25g
Powdered sugar 50g
Milk 5g
Cocoa powder 15g
Almond slices 70g
準備工作:
1.將杏仁片放入烤箱低溫烘烤3分鐘。
2.無鹽奶油放在室溫軟化。
3.低筋麵粉過篩備用。
Preparation:
1. Put the almond slices in the oven and bake at low temperature for 3 minutes
2. Soften the unsalted butter to room temperature
3. Sift the cake flour for later use
步驟如下:
1. 將已軟化的無鹽奶油用攪拌器攪拌。
2. 糖粉分三次加入,要打發至蓬鬆泛白的程度 ,再加入牛奶攪拌均勻。
3. 將蛋液分三次加入,要確認蛋液有充分攪拌至均勻吸收。
4. 將低粉及可可粉分二次加入,用切拌方式攪拌均勻,直到看不到乾粉為止。
5. 加入杏仁片,混合均勻。
6. 工作台上灑上薄薄的一層手粉,將麵糰整型到自己喜歡的形狀。
7. 將整型完成的麵糰包入保鮮膜中,放入冰箱冷凍1個小時。
8. 冷凍後的麵糰比較方便切片,也不容易變型。
9. 取出後切片,放入已經預熱的烤箱中,以170度烤15分鐘。
10. 香脆的巧克力杏仁餅乾就完成了。
Steps:
1. Using a hand mixer, stir the softened unsalted butter
2. Add in powdered sugar in three batches, and beat until it is fluffy and white. Then add in milk and mix well
3. Add the egg liquid in three portions, and make sure that the egg liquid is evenly stirred
4. Add in cake flour and cocoa powder in two batches, and stir evenly until no dry powder is visible
5. Add in almond slices and mix well
6. Sprinkle a thin layer of flour on the table, and shape the dough to your favorite shape
7. Wrap the shaped dough in plastic wrap and put it in the refrigerator for 1 hour
8. The frozen dough is much easier to slice
9. Once sliced, put it in the preheated oven, and bake it at 170 degrees for 15 minutes
10. The crispy chocolate almond cookies are now complete, ENJOY!

Scandinavian Rosette Cookies A traditional homemade Christmas cookie recipe for Jul! ♥
It's not Christmas (Jul) without both making and eating the traditional Rosette cookies. YUM! These Scandinavian cookies are delicious, deep-fried, and melt in your mouth.
Some people like to sugar the bottoms and other people sugar the tops. If you flip it upside down, it looks a little fancier and sugar these that way. The sugar catches the sides and it gives the cookies a bit more contrast. If you sugar the top of the rosette cookies, it looks like a touch of snow. However, either way the rosettes will still taste great! Which way do you usually serve the rosettes with sugar on the top or bottom?
Scandinavian Rosette Cookies Recipe
♥ Ingredients ♥
•1 cup milk
•1 tsp sugar
•1/8 tsp salt
•1 tsp vanilla (or almond extract)
•2 eggs
•1 cup flour
•vegetable oil for frying
•sifted confectioners' sugar to sprinkle
A few flavoring ideas:
•Substitute lemon extract or vanilla sugaring
Kitchen Utensils
•rosette iron star- or flower-shaped
•measuring cups and spoons
•large mixing bowl
•whisk
•thermometer
Instruction:
1.Combine milk, eggs, sugar and salt vanilla extract; beat well. Add flour and beat until smooth.
2.Heat a rosette iron in deep, hot oil (375 degrees) for approx. 2 minutes.
3. Drain excess oil from iron. Dip in batter to 1/4 inch from the top of the iron, then dip iron into hot oil (approx. 375F degrees).
4.Fry rosette until golden, approx. 30 seconds. Lift out; tip upside down to drain. With fork, push rosette off iron onto a paper towel.
5.Reheat iron 1 minute; make next rosette.
When you are ready to serve these cookies, sprinkle the rosettes with confectionary sugar (optional cinnamon sugar or sugar) and jam on the side. You might want to use a sifter if you use confectionary sugar to avoid clumps of confectionery sugar plopping onto the cookies. Instead if you use a sifter, it will look more smoother. Also if you sprinkle the confectionary sugar too early, these cookies will get soggy. So you it is best to sprinkle the sugar just before serving
