2 c Butter or margarine;
-softened 1 c Powdered sugar; sifted
4 c All-purpose flour
1/4 ts Salt
2 ts Lemon extract
Filling Additional powdered sugar Filling: 1 Egg; beaten
2/3 c Sugar
2 tb Butter or margarine;
-softened 1 1/2 ts Grated lemon rind
3 tb Lemon juice
1 ts Cornstarch
Recipe by: Southern Living
Cream butter; gradually add 1 cup powdered sugar, beating well at medium speed of an electric mixer. Combine flour and salt; add to creamed mixture, beating well. Stir in lemon extract. Flour hands, and shape dough into two 16-inch rolls; wrap in wax paper, and chill several hours.
Unwrap rolls, and cut into 1/4-inch slices; place on ungreased cookie sheets. Bake at 400 degrees for 8 minutes or until browned. Cool on wire racks. Spoon filling on bottom side of half the cookies, spreading evenly. Place a second cookie on top of filling, top side up, and sprinkle FILLING Combine all ingredients in top of a double boiler, stirring until blended. Bring water to a boil. Reduce heat to low; cook, stirring constantly, until thickened and -----

*600 grams third class flour (if you are going to use all purpose flour add 1tbsp. milk to your wet ingredients.

1 whole zest of lemon
1/2 juice of lemon (around 25 ml.)
3 tbsp. cornstarch
100 ml. evaporated milk

Preheat Oven to 90C fan assisted (110C non fan)
50g Egg White
100g Caster Sugar
For the Cookies
Preheat Oven to 190C fan assisted (210C non fan)
230g Cold Unsalted Butter
Zests of 2 Lemons
160g Caster Sugar

These lemon curd cookies are made with a buttery shortbread base, filled with bright, tart lemon curd and topped with a simple glaze. They’re beautiful and full of zesty lemon flavor. Simply put, these lemon thumbprint cookies are lemon lover’s dream.

Soft Lemon Cookies - Melt in your mouth
Lemon cookies are super simple to make and delicious. Made with a combination of lemon juice and zest, they have a tremendous natural flavor. I really enjoy them with a nice cup of tea or glass of milk.
Get the recipe:
There are a few tips to making these tasty lemon cookies. First, I find the juice from one lemon is about perfect. If you want them more or less lemony, simple adjust the amount of juice accordingly.
I always use a few drops of yellow food coloring to make them really yellow and vibrant. This is totally optional, and you can be the judge.
The zest from one lemon is about perfect form my liking. Just be careful not to zest too far into the lemon as it will become bitter. You only want the zest from the shiny part of the skin.
The amount of sugar and vanilla extract can be altered too. Just be careful not to over power the lemon flavour with vanilla extract.
