How To make Fasolia Gigandes (Butter Bean Stew)
1 1/2 lb Dried butter beans
1/2 c Pure olive oil
2 md Onions, finely chopped
1 ea Garlic clove, pressed
3 lg Ripe tomatoes, peeled
-- seeded & diced 3/4 c Tomato sauce
3 tb Italian parsley, minced
Salt Freshly ground black pepper 2 c Water
Put the beans in a large pot and cover with water. Bring to a boil over medium heat and cook, partly covered, for about 1 hour, or until beans are almost tender. Drain and set aside. Preheat the oven to 400F. In a heavy saucepan, heat the oil and saute the onions until translucent. Add the garlic, tomatoes, tomato sauce, parsley, salt and pepper, and water. Simmer, covered, over low heat for about 20 minutes, until sauce starts to thicken. Transfer the beans to a casserole or baking dish, pour the tomato mixture over, and stir. Greek style butter beans Γίγαντες
300gr of butter beans (left to soak in water the night before)
2 big carrots
2 pieces of celery
1 red tomato
1 onion
1 clove of garlic
1 cup of tomato sauce
1 cup of olive oil
salt, pepper & paprika
To accompany: 2 big sausages, spicy green pepper, anchoves, black olives
Baked Giant Beans - Gigantes
Baked Giant Beans, or Gigantes Plaki, is a recipe that I love and one I find super useful for vegan guests (though veggies and meat eaters love it just as much)!
Gigantes are a variety of Butter Bean, or Lima Bean, and these are pretty easy to come by if you can’t find Gigantes themselves. This is so good for you. The combination of beans and veg makes for a wholesome, really satisfying meal. Filled with both soluble and insoluble dietary fibre, protein, complex carbs and vitamins and minerals, this is a recipe that keeps you full for longer - and always puts a smile on my guests’ and family’s faces!

Gigantes Beans, meaning “Giant beans are similar to elephant, lima or butter beans. If you can find Greek giant beans from Kastoria or Kozani, they are the best beans for this recipe. Also the word plaki is used to describe any dish that is usually cooked with tomatoes, olive oil and vegetables in the oven. This vegan dish is baked till the beans absorb all juices and flavours, so it only improves with time. Giant Beans Plaki can also be served cold as an appetizer (meze). Suitable for vegans!
Ingredients:
250 gr. Giant butter Beans (best are Kastoria or Kozani variety)
120 ml. virgin Olive oil
250 gr. Celery (stems and leaves)
1 bunch Parsley
Optional: 1 tbsp. Sugar (not shown)
Salt, ground Pepper to taste
400 gr. tin chopped Tomatoes or fresh ripe tomatoes cut in cubes
1 big fresh Tomato
1 medium Onion
7-8 small Carrots
1 Garlic clove
Φασόλια Γίγαντες Πλακί
Σερβίρει 3-4 άτομα
Τα φασόλια γίγαντες είναι πολύ μεγάλα φασόλια. Η καλύτερη ποικιλία είναι από την Καστοριά ή την Κοζάνη. Οι γίγαντες συνήθως μαγειρεύονται με ντομάτες, ελαιόλαδο και λαχανικά στο φούρνο. Αυτό το νόστιμο πιάτο ψήνεται μέχρι τα φασόλια να ρουφήξουν όλα τα ζουμιά και τις γεύσεις, γι 'αυτό και βελτιώνεται κάθε μέρα που περνάει. Οι Γίγαντες μπορούν επίσης να σερβιριστούν κρύοι σαν ορεκτικό (μεζές). Κατάλληλο για χορτοφάγους!
Υλικά:
250 γρ. Γίγαντες φασόλια (τα καλύτερα είναι η ποικιλία Καστοριάς ή Κοζάνης)
120 ml. παρθένο ελαιόλαδο
250 γρ. Σέλινο (μίσχοι και φύλλα)
1 ματσάκι Μαϊντανός
Προαιρετικά: 1 κ.σ. Ζάχαρη
Αλατοπίπερο
400 γρ. ψιλοκομμένα ντοματάκια σε κονσέρβα ή φρέσκιες ώριμες ντομάτες κομμένες σε κύβους
1 μεγάλη ντομάτα για διακόσμηση (σε ροδέλες)
1 μέτριο κρεμμύδι
7-8 μικρά Καρότα
1 σκελίδα σκόρδο

This is one of Greece's traditional recipes. Giant beans grow in the northern part of Greece.
Ingredients & Quantities:
250gr or 9 ounces Giant Beans
1 Carrot
1 Onion
2 tbsp Parsley
1 cup Fresh Tomato sauce (*optional add 1-2 garlic cloves)
3 tbsp Extra Virgin Olive Oil (1tbsp for each person)

Greek oven baked butter beans (vegan)
Cooking with ioannis episode 21: Greek oven baked butter beans (γίγαντες πλακί / gigantes plaki). An easy wholesome vegan dish. Ingredients: 500 gr of dried butter beans, 3 carrots, 4 onions, 3 cloves of garlic, 2 bay leaves, a few juniper berries, 1 teaspoon paprika, 1 soup-spoon salt, black pepper (to taste), 50ml wine vinegar, 100ml olive oil, 50gr tomato puree.
Method: 1) place the beans in salted warm water and leave to soak for at least 6 hours 2) chop the onions and carrots into little cubes and place to fry in a deep pan with 50ml of the olive oil. Shallow fry till golden 3) add garlic and the beans 4) add juniper, bay leaves, vinegar, salt, pepper and paprika 4) add the tomato puree and 1 litre of water 5) add another 50ml of olive oil and leave to simmer in low heat for an hour 6) empty onto a baking tray and cook in the oven for 45’ in 180 degrees Celsius.
