How To make Fabulous Chocolate Cake
1/2 c Margarine; or
Half margarine half butter c Sugar 2 Eggs
3 oz Chocolate; melted
1 1/2 c Milk
1 ts Vanilla
1 ts Red food coloring
2 c Cake flour; sifted
2 ts Baking powder
Salt 1 c Pecans; finely chopped
Frosting: 1/4 c Butter; or margarine
1 1/2 oz Chocolate; melted
1 Egg; beaten
1 ts Vanilla
1 pk Powdered sugar
1 c Pecans
Cream butter and sugar. Add eggs, one at a time, beating well after each addition. Add chocolate, then add combined liquid ingredients alternately with combined dry ingredients. Add nuts. Bake in greased and floured 13x9-inch pan for approximately 40 minutes at 350~. Note.
Cake is delicious without pecans. Just use them in the frosting if you prefer. Frosting. Melt butter and chocolate. Add a small amount to beaten egg, then add back into chocolate mixture. Add vanilla. Stir in powdered sugar and nuts. -----

For the butter milk:
Milk ½ cup
Vinegar or lemon juice 1tbsp
Sugar 6tbsp
Cooking oil ½ cup
Flour (maida) 1 and ½ cup
Cocoa powder 3 tbsp
Baking powder 1 tsp
Baking soda ½ tsp
Instant coffee 1tsp
Warm milk ¾ cup
Baking tray 20cm
For oven: preheated oven 170c – bake for 35 to 40 minutes
For chocolate coating:
Dark chocolate or milk chocolate 150g
Chopped peanuts 1/3rd cup
Melted chocolate (optional)

his No Bake Chocolate Cake is also known as a Chocolate Biscuit Cake, a Refrigerator Cake, and a Chocolate Tiffin ('Tiffin' being an Anglo-Indian term for lunch or afternoon snack). It is a popular English cake that reminds me of a chocolate bar. I love how it looks with all the pretty flecks of nuts and biscuits encased in dark chocolate. It is so easy to make. Just melt some really good chocolate with butter and golden syrup (or corn syrup, honey, agave or brown rice syrup) and then fold in lots of chopped nuts and crushed Digestive Biscuits (or Graham Crackers). That's it. Pour into a pan and let it chill, preferably for a day or two, before indulging. The chilling not only makes the cake nice and firm but it gives the flavors time to soften and mingle into one delicious cake that you won't be able to stop eating.
