garlic, minced, heaping

curry, heaping

ragu, or prego sauce, jars
4
cup
carrots, chopped
4
cup
broccoli, chopped
4
cup
celery, chopped
4
cup
cauliflower, chopped
2
each
green beans, cans
1/3
pound
pasta shells, boxed, or 2 lb. diced potatoes
1
water to cover
Directions:
Brown turkey with onions and garlic. Add the rest of the ingredients. Simmer 15 minutes. Let stand 15 minutes.

Colombian spice mix (rice flour, cumin, garlic powder, black pepper, paprika)
8-12 cups or 3 L of water
Optional:
Extra veggies you have laying around, for example spinach or green peas

How to Make High Carb Low Fat Vegan Potato Soup | Sopa de Papa
The high carb low fat plant based version of “Sopa de Papa” or Potato Soup!
Things to know:
- Recipe inspired by a traditional Colombian Soup I used to have growing up.
- Add any vegetables or legumes you like, or have it regular with just potato. Be mindful of the cooking time for the extra ingredients you add.
- Water fry the soup base ingredients (garlic, onion, leek, + optional chile) before adding the soup water + bay leaves to boil for extra flavor!
- Pair soup with no oil carbs like steamed rice, tortillas, bread, or arepas!
Simple Ingredients:
8-10 peeled and sliced potatoes (I used russet potatoes)
1 and half thinly sliced leek
1 head of garlic, finely minced
½ of an onion, finely minced
1 chile (optional, I used 1 serrano chile sliced in half to expose seeds)
Salt and black pepper to taste (I used about 1 tablespoon of salt)
Vegetable Bouillon / Paste / Broth (I used 1 tablespoon of each vegetable bouillon)
3 Bay Leaves
2.5 L of water
Fun Add-ins:
1 tablespoon of No Salt Seasoning
1-2 cans of garbanzo beans or chickpeas
250 g of carrots
3 huge handfuls of spinach
