How To make Elephant Ears Cookies
1 pk Frozen puff pastry, thawed
1 Egg; beaten
1/4 c Sugar; divided
2 Semisweet chocolate
Recipe by: COUNtrY CHRISTMAS RECIPES Preheat oven to 375 degrees. Grease cookie sheets; sprinkle lightly with water. Roll one sheet of pastry to 12x10" rectangle. Brush with egg; sprinkle with 1 Tablespoon sugar. Tightly roll up 10" sides, meeting in center. Brush center with egg and seal rolls tightly together; turn over. Cut into 3/4" thick slices. Place slices on prepared cookie sheets. Sprinkle with 1 Tablespoon sugar. Repeat with remaining pastry, egg and sugar. Bake 16-18 minutes until golden brown. Remove to wire racks; cool completely. Melt chocolate in small saucepan over low heat, stirring constantly. Remove from heat. Spread bottoms of cookies with chocolate. Place on wire rack, chocolate side up. Let stand until chocolate is set. Store between layers of waxed paper in airtight containers. -----

Really Easy Palmiers and Rough Puff Pastry Recipe | Cupcake Jemma Channel
Palmiers are hands down the most delicious crispy buttery sweet treat that ever walked this land. These classic French pastries are surprisingly simple to make all you need is pastry and sugar. In this video Sally is going to make an easy Rough Puff pastry but if you like you can just buy ready made puff pastry from the store!
This recipe will make about 12 Palmiers.....so you might want to double or triple it ;)

325g Plain Flour (plus extra for rolling)
250g Unsalted Butter
1/2 tsp Salt
7-10tbsp Ice Cold Water
Approx 200g Caster Sugar

The Ingredients I used:
- 1 pack pre bought puff pastry
- Cinnamon Sugar ( Use as much as you like )
- 200 grams chocolate
( You can use both dark or milk chocolate, I had some melted chocolate left over, so this is a bit of a guideline)
- Sea Salt
- Flour (for dusting the pastry)
Instructions:
Place your Puff pastry sheet on a dusted work surface.
Roll out the dough and sprinkle some cinnamon sugar on the top each time you flip the dough. Make sure you really push in the sugar into the dough.
When you've rolled out the dough into a rectangular shape, flip the dough until the edges meet. sprinkle Sugar, and fold the edges until they meet again, sprinkle Sugar and fold the dough one last time.
Chill the dough for 30 minutes in the fridge.
Preheat your oven to 220 Celsius (425 Fahrenheit)
Cut the chilled dough into 1 or 2 cm pieces ( 1/2 - 3/4 inch)
and place the cookies on a baking sheet.
Sprinkle some Sugar over the top and bake for 8 to 10 minutes.
after the first bake rotate your baking sheet and flip each cookie.
Bake for another 5 to 10 minutes at 160 Celcius (325 Fahrenheit)
or until they look golden brown.
Let the cookies cool and melt some chocolate. Dip each cookie into the chocolate, Sprinkle some sea salt over the chocolate part and let harden.

Elephant Ear Cookies
A really pretty cookie that's so easy to make!
Ingredients:
1/4 cup of sugar
1/4 of ground pecans or walnuts. I used a mix of both
2 tsp of cinnamon
1/4 tsp of nutmeg
1 package of frozen puff pastry that's been thawed
1 egg
1 TBS of water
2 TBS of sugar for the counter
Make your filling mix. Add sugar, cinnamon, ground nuts, and nutmeg in a bowl and mix them.
Put some sugar on your counter, place a sheet of the puff pasty on it and press it lightly. Brush with some egg wash. Place filling mix in the center and fold edges over leaving a 1/4 inch gap. Brush sides with egg wash and place more filling on one side. Fold over. Cut into 1/4 inch slices. Place on cookie sheet cut side up and bake at 400 for about 15 minutes or until slightly golden. Do not over bake!!
