How To make Les Oreilles De Cochon (Pigs' Ears)
2 c All-purpose flour
1/4 ts Salt
1 ts Sugar
4 tb Butter
2 Eggs
1 tb Water
1 ts Apple cider vinegar
Shortening and/or lard For frying 1 c Cane or corn syrup
1/2 c Sugar
Sift the flour, salt, and sugar together. Rub in the butter with the fingertips as for pie dough. beat the eggs with the water and vinegar, then pour over the flour mixture and beat well. Turn the dough out on a lightly floured surface and knead it 2-3 minutes until smooth. Chill for 30 minutes; divide into 12 pieces. Roll out very thin, like pasta dough, into rough 5-inch squares. Cut each square in half on the diagonal. Fry the pieces in single layers in about 1/2 inch of hot fat at 360; lard is traditional, but you may use shortening. Turn once when golden brown. In the meanwhile, combine the syrup and 1/2 cup sugar in a saucepan. Cook to the soft crack stage, about 270. Drain the fried pastries on brown paper and drizzle about 1 tablespoon of the syrup over each. Eat at once. SOURCE: Biscuits, Spoonbread, and Sweet Potato Pie (pg. 251) -----

How To Cook Pig Ears Chinese Style #shorts
Cooking time for Chinese style sliced pig ears: 1 hour 0 minutes
Many people may have never tasted the pig ear because it is probably not considered food. However, pig ear is one of the Chinese people's delicacies. I think the deep root for Chinese almost eating every part of the pig is that animal protein was so scarce in the past that people did not want to waste any of what they had, ear, mouth, tail, trotter, intestine, etc. Over the years, Chinese people developed many recipes to turn these wastes into delicious foods. Nevertheless, life is much better for many Chinese nowadays. However, people still prefer those delicacies to the good parts. In China, it's prevalent to see the price of pig ears or trotters be higher than other parts of the pig.
This is a Sichuan-style cold dish that people like to eat along with beers in summer and hard Chinese liquor in winter.
???? Ingredients to cook these Chinese Style Sliced Pig Ears :
❣️ One pig ear
❣️ Half cucumber
❣️ 30g red chili flakes
❣️ 1 tablespoon of roasted sesame seeds
❣️ 20 roasted Sichuan peppercorns
❣️ 4 cloves of garlic
❣️ 1 teaspoon of sugar
❣️ 1 tablespoon of light color soy sauce
❣️ 1 teaspoon of Chinese black vinegar
❣️ 1 tablespoon of sesame oil
❣️ Handful of coriander
❣️ 2 to 3 tablespoons of olive oil
Preparations:
1. Pig Ears and Vegetables
- Clean and wash the pig ear, burn off the remaining hairs over the open fire.
- Boil the pig ear for 40 to 50 minutes. You may add a bit of Chinese rice wine and ginger while boiling the pig ear to eliminate the unpleasant smell. Let the pig ear cool down afterward.
- Slice and sliver the cucumber into 3mm size.
- Slice the pig ear into 3mm size slivers also.
- Slightly crush the sesame seeds.
- Crush the roasted Sichuan peppercorn into powder.
- Crush, do not chop the garlic cloves.
- Roughly chop the coriander.
2. Making the chili oil
- Mix the chili flakes and crushed sesame seeds in a small bowl.
- Heat up the olive oil to about 180 degrees.
- Pour the oil in the bowl of chili, and at the same time, stir the chili and sesame seeds.
- Set aside for 10 minutes
3. Mixing everything
The last step is to mix chili oil with all the other ingredients, and then you can serve this dish with a cup of cold beer, cheers!
