Drunken chicken... it's one of 2022's top trending recipes, according to Google's annual ‘Year in Search’ trends! Traditionally hailing from Shanghai, drunken chicken gets its name from chicken being poached in a rather boozy broth flavoured with Chinese rice wine. It's typically served chilled, although room temperature is also great. Serve this trending chicken dish as part of a Chinese banquet and watch the compliments come flooding in.

This weeks Master Chef Australia 2022 recipe we recreated is Drunken Chicken 2.0. Alvin did this dish in his season and it „broke the internet“. So we thought we give it a go and yes it was worth it!

Ingredients
Drunken Chicken
* 1.2L Shaoxing wine
* 500ml mirin
* 500ml water
* 80g rock sugar
* 10 cm ginger, sliced into 1cm pieces
* 3 x 250g chicken breasts, skin on
Drunken Broth
* 750ml reserved poaching liquid
* 4 bird’s eye chillies, halved lengthways
* 3cm ginger, sliced
* 1 ½ tbsp shaved gula melaka, plus extra to taste
* 1 ½ tbsp rice wine vinegar, plus extra to taste
* Pinch salt
Bruised Salad
* ¼ cup raw peanuts
* ¼ cup dried shrimp, softened in water, drained
* 4 cherry tomatoes
* ½ cup shredded green mangoes
* ½ cup green beans, trimmed
* 1 cup mixed herb leaves (coriander, mint and dill)
* 3 tbsp shaved gula melaka, plus extra
* 3 tbsp fish sauce, plus extra
* 3 tbsp lime juice, plus extra
* 1 bird’s eye chilli, sliced

醉雞是江浙地區的傳統名菜,雖然好多人都聽說過,但卻沒有嚐過。這道菜以醉鹵的酒香濃郁和雞肉的嫩滑鮮香而著稱,而且製作過程非常簡單,只需按照視頻中的配方,簡單幾步即可完成。
在這次的製作中,我們將使用雞腿來做醉雞,同時還會介紹使用雞腿來製作上海白斬雞的方法,讓您一次學會兩種美味。食材方面主要用到雞大腿、香料(花椒、荳蔻、八角、香葉、桂皮、生薑和小蔥)、荳蔻用於去腥增香,而其淡淡的苦味會使醉滷汁的口感更加厚重,另外還有冰糖、糟鹵、紹興黃酒和清水。
首先,我們將雞腿放入鍋中,加入蔥結、生薑和一些料酒,然後開大火。當看到水面冒出細小氣泡和油鍋底冒出一串串氣泡時,立即調小火加蓋煮6分鐘。然後關火不要打開鍋蓋,繼續讓雞腿浸泡15分鐘。
接下來製作醉滷汁,先將香料炒香,經過兩三分鐘後,加入清水、蔥結和生薑,煮沸後轉小火煮5分鐘,再加入冰糖、食鹽、白酒、糟鹵和黃酒。嚐一下糟鹵的味道,應該要感覺比較咸。將醉滷汁倒入大碗中,放入冷卻後的雞腿,加蓋保鮮膜,放入冰箱冷藏4小時。如果想更快吃到,可以先切開雞腿,然後放入醉滷汁中,2小時即可。
製作上海白斬雞也很簡單,將撈出的雞腿刷上香油,冰箱冷藏30分鐘後,切成小塊即可。
最後,將醉鹵醃製後的雞腿切開,裝盤淋上少許醉鹵,再點綴一下即可。這樣的醉雞肉質嫩滑,鹹中帶鮮,又透著淡淡的酒香,非常適合夏日享用。
特別提示,如果將雞腿切開再醃製,可以節省容器的空間,同時也可以同比例縮減配方中各種調料的用量。而用過的醉鹵可以燒開保存,還可以用來醃製醉蝦、醉蟹等美食,充分利用食材。

Taiwanese Drunken Chicken: Quarantine Comfort Food I Reach Further
Drunken chicken is a simple yet delicious dish that you can whip up at home in about 30 minutes. What makes this Taiwanese entrée so flavorful and ‘drunken,’ as the name suggests, is a can of Budweiser.
You will need garlic, ginger, canola oil, chicken, oyster sauce (or hoisin sauce), scallion, sugar and beer. This sweet and savory dish is easily prepared in a few simple steps and served over warm white rice.

Drunken chicken, like the name suggests, the chicken is literally soaked in alcohol. The alcohol used in this recipe is a type of HuangJiu (Yellow wine) called ShaoXing. It's fermented with sticky rice, originated in the region of Shaoxing, China.
Ingredients (For 4 people):
Marinated chicken:
Half a chicken 808g / Un demi-poulet 808g
Salt 1Tbsp / Sel 1Tbsp
Sesame oil 2Tbsp / Huile de sésame 2Tbsp
Ginger slices 20g / Tranches de gingembre 20g
1 Green onion / 1 Oignon vert
Sauce:
Sugar 1Tsp / Sucre 1Tsp
5 Red dates / 5 Dattes rouges
2 Slices angelica / 2 Tranches d'angélique
30 Goji berries / 30 Baies de Goji
Salted shao xing cooking wine 200ml / Shao xing win de cuisson salé
Hot water 400ml / Eau chaude 400ml
