How To make Diabetic Orange Cookies
1 md Orange
1/2 c Shortening
2 tb Granualted sugar replacement
Or granulated fructose 1 Egg
2 c Flour
1/2 ts Baking powder
1/2 ts Baking soda
1/4 ts Salt
1/2 c Buttermilk
Juice the grate the rind of the orange, remove seeds from the juice. Cream together shortening and sugar replacement. Add egg, orange juice and grated orange rind, beating until light and fluffy. Combine flour, baking powder, baking soda and salt in sifter, and add alternately with buttermilk to creamed ixture. stir to blend. Drop by teaspoonsful onto lightly greased cookie sheets, 2-3 inches apart. Bake at 375 F for 10-12 minutes. Delightfully refreshing orange butter cookies! This recipe, adapted from the New York Times Orange Butter Cookies recipe, delivers crumbly and rich cookies that pack a punch of citrusy flavors.

Sugarless Orange Cookies
Yields: About 4 dozen
Ingredients:
½ cup butter, softened
1 egg
½ cup orange juice
1 tsp. orange rind, grated
2 cups flour
2 tsp. baking powder
½ tsp. cinnamon
½ tsp. salt
½ cup walnuts, toasted and chopped
½ cup raisins
Preparation Directions:
~ In a large mixing bowl beat butter until creamy; beat in egg, orange juice and rind until well mixed. Gradually add flour, baking powder, and salt and mix until well blended. Stir in walnuts and raisins. Drop by teaspoonfuls onto ungreased baking sheets.
~ Bake at 375 degrees for 10 to 12 minutes or until golden brown.

This Orange Drop cookie recipe is one I grew up having at Christmas every year. It's one of my family faves. Not sure where this recipe came from.

INGREDIENTS
*2/3 c shortening (I use 1/3c shortening & 1/3c room temp. butter)
*3/4 c granulated sugar
*1 egg
*1/2 c orange juice
*2 tbsp orange zest
*2 c all purpose flour
*1/2 tsp baking powder
*1/2 tsp baking soda
*1/2 tsp salt
Bake at 400 degrees F for 10-12 minutes.
GLAZE
Just mix everything until well combined. For thicker glaze (to make icing), add more powdered sugar. For thinner glaze (for drizzling), add more orange juice.
*1 + 1/2 c powdered sugar, sifted
*2 + 1/2 tbsp room temp. butter
* 1 + 1/2 tsp orange juice
*1 tsp orange zest

1/2 cup chopped cashews
1/2 cup sesame seeds
1/4 tsp sea salt

1/8 tsp cardamom
1/4 tsp ground ginger
1/2 cup pitted dates if hard then soaked in hot water for 5 minutes and then drained

1/4 cup coconut oil melted
1/2 cup unsweetened apple sauce
