This recipe is for an 8 Pie Dish, for a bigger dish multiply everything be 1.5, or even 2 if you're going Supersize Pie!
PIE CRUST:
255g Plain Flour
1/2 tsp Salt
170g COLD CHOPPED Unsalted Butter
5 1/2 tbsp ICE COLD Water
3/4 tbsp Cider Vinegar (or white wine)
CHOCOLATE SILK FILLING:
195g Caster Sugar
3Eggs
170g 70% Dark Chocolate
1 tsp Vanilla Extract
1/2 tsp Salt
100g Soft Unsalted Butter
225g Double Cream (heavy cream)
10g Icing Sugar
Plus extra cream and some chocolate for topping!

Decadent Strawberry Dark Chocolate Brownie Mini-pies (soaked in red wine) | Magic Marinade | ASMR
This one's an original that I hone and modify every strawberry season. This time I made it without using flour to thicken the jam, just cooking it out till it loses enough water to hold shape. So less flour, and just the right amount of sugar to make that strawberry and dark chocolate shine.
Macerating the strawberries in red wine also makes that winey flavour linger, as opposed to just getting all baked out. These smaller variations also bake faster (done in 30 minutes), and are great for practicing your pie lattice work.
*For the pastry dough (Should make four 12cm mini-pies)*
150g Butter frozen and cut into cubes
180g All Purpose Flour
or
90g whole wheat flour (atta)
90g all purpose flour (maida)
30g Cocoa
1 pinch salt
40g powdered Sugar
65ml Vodka
25ml Ice Cold Water
or
90ml ice cold water

80g Maida/All Purpose Flour
*For the strawberry filling*
800g Strawberries
150g Brown Sugar
100ml Red Wine (optional)
1tbsp Balsamic Vinegar
1tsp vanilla or 1 Vanilla pod
3 tablespoons Maida (all purpose flour) or whole wheat flour (atta)
1 teaspoon vanilla extract

3 oz (90g) semisweet chocolate (55%-70%), for melting
3/4 cup (170g) unsalted butter
1 tsp (3g) instant espresso powder
1 cup (200g) sugar
3 eggs
1 tsp (5g) vanilla extract
1 tbsp (8g) dark cocoa powder
1/2 tsp (3g) salt
3/4 cup (95g) flour
3 oz (90g) semisweet chocolate (55%-70%), chips or chunks
Chocolate Chip Cookie Dough
1 1/8 cup (140g) flour
1/2 tsp (3g) baking soda
1 tsp (3g) cornstarch
1/2 tsp (3g) salt
1/3 cup (80g) unsalted butter, room temperature
1/3 cup (70g) brown sugar
2 tbsp (30g) sugar
1 large egg
1 tsp (5g) vanilla extract
2/3 cup (100g) semisweet chocolate chips or chunks (55%-70% cocoa)
extra chocolate chips for topping, optional
