How To make Dandelion Flower Fritters
1 c Whole-Wheat Flour
2 tb Olive Oil
2 ts Baking Powder
1 c Dandelion Flowers, clean and
Unsprayed 1 pn Salt
1 Egg
Nonstick Vegetable-Oil Spray 1/2 c Low-Fat Milk -or- Water
This variation on pancakes uses the yellow puffs of the dandelion, a good source of Vitamin A. In a bowl mix together flour, baking powder and salt. In a separate bowl, beat egg, then mix with milk or water and olive oil. Combine with dry mixture. Stir in yellow flowers carefully, taking care not to crush them. Lightly spray a griddle or frying pan with vegetable oil. Heat until thoroughly warmed. Pour batter onto griddle by spoonfuls and cook like pancakes. Makes 10 fritters.

Join my mother and me as we make our first attempt at making two different kinds of dandelion flower fritters! We based our recipes off of one of Susun Weed's recipe found in her book: Healing Wise. I can't eat wheat or dairy so we made some substations.
We also used different amounts of each ingredient. There are many different recipes for dandelion flower fritters so this is just one way to make them.

Dandelion Flowers & Making Fritters Part 1
You've got a ton of dandelions and don't want to spray toxins on your lawn? AWESOME! In this video I talk about identifying dandelion (seems obvious but there are look-alike out there) and the best time to harvest the flowers.

Dandelion Fritters ~ Gluten Free:
Pick as many Dandelions as you would like
Make sure they have not been sprayed with any Pesticides
Pick only the Flower Head ~ Leaving the Stem behind
Shake the container you collected them in, checking for insects.
You can also rinse them gently in cold water. But make sure they are dry before you dip them in the batter.
In a medium bowl combine with a fork:
2/3 Cups Bob's Red Mill Gluten Free Brown Rice Flour
1/3 Cup Bob's Red Mill Gluten Free Corn Meal
Salt and Pepper to taste (Or any other spices of your choice)
Add:
1 Egg
1 Cup Milk
Mix until combined
Heat 1 Canola Oil to 350* in a Large Pan (Or Oil of your choice)
I used a Thermometer to make sure my Oil was at the right temperature.
Dip each Dandelion Flower Head into the Mixture, making sure it is completely coated
Carefully drop into the Oil.
Cook for a few seconds then turn over and cook a few more seconds. They Brown up fast.
Remove from the Oil with a Slotted spoon and drain on Paper Towels.
I cooked about 3-4 Dandelions at a time!
Finish frying up all the Dandelions.
I sprinkled a little bit of Salt on the Fritters after they were done!
If you would like them sweet,, Drizzle with Maple Syrup, Honey or Powdered Sugar.
Or if you'd like them to be Spicy,,, dip in some Hot Sauce of your choice.
These were so good!

Dandelion Fritters
After a long and cold winter, spring is finally here! I start planting some of my vegetables, and share a lovely Dandelion Fritter recipe.
Dandelion Fritters
1 cup flour
1 cup milk
1 egg
dandelions
oil
seasoning
Whisk together flour, milk, egg and seasoning. Heat a pan with oil on medium-high heat. Coat the dandelion heads in batter and drop in the hot oil. Cook until golden brown then flip over and repeat.
