The Heat of the Curry Master's Kitchen on a Busy Friday Night at Shambhala Village Indian Restaurant
✓ We are excited to let you know that we have recently discovered a great restaurant in the heart of Birmingham.
As you probably know by now we love Desi places like this; in this video we point our camera in the direction of the Curries section of the kitchen in which the Head Chef gives us a insight into how he quickly cooks up his delicious dishes to a packed and very busy restaurant.
Notice how the chef is so calm and keeps his cool under such a fast paced environment.
Also in the background you can see the other colleagues working their magic such as the tandoori oven master making naan breads and the Indo-Chinese Chef's wok stir fry action.
Some of the curry dishes and items being cooked are were:
* Maharani Thali (Veg Platter, Poppadum, Paneer Makhni, Paneer Jalfrezi, Mix Veg, Veg Rice, Dal Makhni, Tandoori Naan Bread).
* Chilli Paneer
* Malai Kofta
* Tandoori Soya Chicken
Note that; in Indian restaurants dishes are cooked on a very high heat which delivers a slight smokiness to the cooked food and gives that distinctive restaurant flavour, taste and character to a dish which you simply cannot recreate at home.
The guys were very busy at most times of my visit and we didn't feel it appropriate or right to interrupt to ask what dishes were being cooked up; but we briefly got a chance to ask the chef (towards the end of the video) what some of the spices, sauces and gravy recipe ingredients being used were.
Shambhala Village Restaurant is now confirmed as one of our favourite restaurants whenever my family and I ever visit Birmingham (aka Bham) because we found that the food did not fail to deliver on the taste factor and the portion size of the food served up is very generous they serve up restaurant quality food at Indian Street Food prices.
A special thank you to all the Shambhala team who welcomed us and graciously allowed us a privileged glimpse into their kitchen to do the videoing.

EGG/ANDA TIKKA MASALA - Some recipes or dishes get stuck in your mind, like this Egg tikka Masala curry got stuck in mine! Best part? You can make this without having to boil eggs!

EGG/ANDA TIKKA MASALA
Preparation time 10 minutes
Cooking time 25-30 minutes
Serve 4-5
Ingredients
For Egg Mixture
18 no. Eggs, अंडे
Salt to taste, नमक स्वादअनुसार
1 tsp Degi red chilli powder, देगी लाल मिर्च पाउडर
½ tsp Turmeric powder, हल्दी पाउडर
1 tsp Oil, तेल
For Cooking Egg
1 tbsp Oil, तेल
Prepared Egg Mixture, तयार किया हुआ अंडे का मिश्रण
1 tsp Ghee, घी
For Anda Tikka Masala
2 tbsp Oil, तेल
1 tbsp Ghee, घी
1 no. Bay leaf, तेज पत्ता
3 no. Green cardamom, हरी इलायची
4 large Onions, finely chopped, प्याज
1 heaped tbsp Ginger Garlic paste, अदरक लहसुन का पेस्ट
¼ tsp Turmeric powder, हल्दी पाउडर
1 tbsp Coriander powder, धनिया पाउडर
1 ½ tbsp Degi red chili powder, देगी लाल मिर्च पाउडर
¼ cup Water, पानी
1 ½ cup fresh Tomato puree, ताजे टमाटर की प्यूरी
Salt to taste, नमक स्वादअनुसार
2 cups Water, पानी
Salt to taste, नमक स्वादअनुसार
½ tsp Sugar, चीनी
1 cup Fresh cream, ताज़ा मलाई
2 tbsp Tender Coriander stems, finely chopped, धनिये के डंठल
Fried eggs & vegetables, तले हुए अंडे और सब्जियाँ
2-3 tbsp Butter, cubed, मक्खन
½ tbsp Roasted dry fenugreek leaves, crushed, कसूरी मेथी
For Marination
2 tbsp Mustard oil, सरसों का तेल
Salt to taste, नमक स्वादअनुसार
1 tbsp Ginger Garlic paste, अदरक लहसुन का पेस्ट
¼ tsp Turmeric powder, हल्दी पाउडर
½ tbsp Degi red chili powder, देगी लाल मिर्च पाउडर
2 tsp Lemon juice, नींबू का रस
2-3 heaped tbsp Hung curd, टंगा हुआ दही
Prepared Egg frittata, cut into diced, तयार किया हुआ अंडे का फ्रिटाटा
1 large Capsicum, diced, शिमला मिर्च
1 large Tomato, diced, टमाटर
For Shallow Frying
2 tbsp Oil, तेल
Marinated eggs & vegetables, मैरीनेटेड अंडे और सब्जियाँ
For Garnish
Fresh cream, ताज़ा मलाई
Roasted dry fenugreek leaves, crushed, कसूरी मेथी
Coriander sprig, धनिया पत्ता
Process
For Egg Mixture
In a large bowl, add eggs, salt to taste, degi red chili powder, turmeric powder, oil and mix it well.
Keep it aside for further use.
For Cooking Egg
In a pan, add oil, once it's hot, pour prepared mixture and cook it well on low flame.
Cover it with a lid or another pan and cook for 15-20 minutes.
Transfer it to another pan, flip the egg mixture and cook it for 10-15 minutes on low flame.
Transfer it to a plate and keep it aside to cool down at room temperature.
For Anda Tikka Masala
In a handi, add oil & ghee, once it's hot, add bay leaf, green cardamom, onions and saute it until translucent.
Add ginger garlic paste and cook for a while until golden brown.
Add turmeric powder, coriander powder, degi red chili powder and saute for a minute.
Add water and mix it well, add fresh tomato puree, salt to taste and cook it well.
Add water to adjust the consistency, add salt to taste, sugar, fresh cream and stir it well.
Add tender coriander stems, fried eggs & vegetables, butter and let it simmer for a while.
Finish it with some roasted dry fenugreek leaves and mix it well.
Transfer it to a serving dish or bowl, garnish it with fresh cream, roasted dry fenugreek leaves and coriander sprig.
Serve hot with roti.
For Marination
In a bowl, add mustard oil, salt to taste, ginger garlic paste, turmeric powder, degi red chili powder, lemon juice, hung curd, prepared egg frittata, capsicum, tomato and toss it well.
Keep it aside to marinate for further use.
For Shallow Frying
In a pan, add oil, once it's hot, add marinated eggs & vegetables and fry on both the sides until golden brown.
Transfer it to a tray or plate and keep it aside for further use.
