Easy Summer Appetizer Spicy Curry Tuna Salad in Crispy Wonton Cups

Tuna Salad Wonton Cups
Ingredients
15 Wonton Wrappers
1/2 Onion
8 oz Canned Tuna
2 Tbsp Mayonnaise
2 Tbsp Condensed Milk
2 Tbsp Whole Kernel Corn
2 Tbsp Green Peas
1/2 tsp Black Pepper
1 Tbsp Bull Head Sha Cha (BBQ) Sauce
1 Tbsp Bull Head Curry Paste
Dash of Chopped Coriander / Green Onion
Directions:
1. Place Wonton Wrappers in muffin tins, spray with a little bit oil, and fry in an air-fryer at 355°F for 5 minutes (or 10 minutes in an oven).
2. Dice the onions. Add oil in a frying pan, and pan fry the onion until translucent.
3. Add whole kernel corn, green peas, black pepper, Bull Head Sha Cha (BBQ) Sauce and Bull Head Curry Paste, saute for about 1 minute.
4. In a mixing bowl, add canned tuna, mayonnaise, condensed milk and the veggie mix from Step 3 to mix well. Chill the tuna salad in the fridge for 10 minutes.
5. Take out the air-fried (baked) crispy wonton cups and fill them with the tuna salad.
6. Sprinkle the coriander or green onion to decorate!

My goal is to infuse flavour with nutrition — without sacrificing either. And so, I decided to replace the regular mayonnaise with Greek yogurt and added a bunch of nutritious ingredients to create this recipe.
The result?
A heart-healthy tuna salad that's lower in fat and calories and a good source of calcium, protein and probiotics.

How to make Curried Tuna Salad With Greek Yogurt
✅INGREDIENTS
* 1 celery, diced into very small chunks
* ½ spring onion, finely chopped
* ½ jalapeño, deseeded and finely chopped
* ¼ cup cilantro, leaves only, finely chopped
* 1 can tuna, Albacore, white tuna in water (170 grams), well-drained
* ¼ cup Greek yogurt, zero fat
* 1 tsp curry powder
* ¼ tsp salt, sea salt
* ½ tsp black pepper, coarse
✅INSTRUCTIONS
⓵ Add drained tuna to a medium-sized bowl and use a fork to mash it into very small flakes.⓶ Combine chopped celery, spring onion, jalapeño and cilantro with the tuna, and mix well.
⓷ Stir in Greek yogurt, curry powder and season with salt and pepper. Take your time to mix everything until it is well combined.
