How To make Curried Lentil Pate
2 tb Safflower or peanut oil
1 md Onion, chopped
2 Cloves garlic, minced or put
-through press 2 ts Curry powder
1/4 ts Turmeric
1/4 ts Chili powder
1/2 ts Cumin seeds
1 c Dried lentils, washed and
-picked over 2 To 2 1/2 cups water
1 ts Sea salt
2 Eggs
1/4 c Milk
1/4 ts Ground ginger
From "Gourmet Vegetarian Feasts" by Martha Rose Shulman OR 1/2 teaspoon grated fresh ginger Freshly ground black pepper, to taste 1. Heat vegetable or peanut oil in heavy bottomed saucepan or soup pot and
add onion, garlic and spices and saute gently until onion is tender, adding more oil if necessary 2. Add lentils and water, bring to boil, add salt, cover, reduce heat, and
simmer 1 hour or until tender. Add more liquid if necessary. Remove from heat and drain. 3. Preheat oven to 400F.
4. Puree lentils in blender or food processor with remaining ingredients.
Adjust seasonings and pour into a buttered pate terrine or casserole. Cover and bake for 50 to 60 minutes. Cool and refrigerate, or serve warm. This can be frozen. Makes 6 servings. Posted by Mimi Taylor.

When we first went vegan we avoided lentils because we didn’t want to fit into that negative “weird hippy vegan” stereotype.
However, as we experimented more with vegan cooking we realised that lentils aren’t boring in the slightest. In fact, they’re absolutely awesome.

Vegan Lentil Pate - One of the Best Lentil Dip Recipe Ever
Beluga lentil pate it's packed with healthy fats and protein to keep you satisfied. Great idea for a snack and deeply savory and creamy appetizer to serve at your next party.
If you are reaching for hummus again and again this is a nice option for a change.

Ingredients
250 g beluga lentils
1 head of garlic
1/2 tsp cumin
1/2 tsp ground coriander seeds
1/2 tsp chilli flakes
1 pinch of salt
40 ml olive oil
Juice of one lemon
Directions
1. Preheat the oven and roast one head of garlic with salt and a little bit of olive oil.
2.In a pot boil the lentils for 15-20 minutes or until tender.
3.In a tray add two big spoons of cooked lentils, drizzle with olive oil and sprinkle over the spices(cumin, ground coriander seeds, chilli flakes and pinch of salt). Roast for about 10-15 minutes or until crunchy.
4.In a food processor add remaining lentils, salt to taste, olive oil, lemon juice and roasted garlic. Process to the thickness you desire.
5.Serve with roasted crispy lentils on top and with a drizzle of olive oil.
