Cucumber raita is one of the most popular dishes in Indian cuisine, and it is so easy to make, so healthy, so delicious and so quick. To make cucumber raita you start with some plain yogurt, which I am going to put right into my bowl. Your yogurt can be homemade or you can buy it in a store. I am just going to stir it till it is quite smooth. I am going to add some peeled, grated cucumber right into my yogurt. And I have some chopped mint, which goes really well with the yogurt and the cucumbers. I am going to add that. I am just going to stir it up until it is smooth. A
nd now I am going to do the spicing. So I am going to add a little bit of salt. And because this recipe is not cooked, it is just a fresh salad condiment type of thing, I am going to add toasted cumins because they are already cooked. So whole toasted cumin seed that has been ground up goes in here. And there you have it, cucumber raita that is super easy, super delicious and super healthy.

Turkish Cacik | Yogurt with Cucumbers & Herbs
Ingredients:
3 cucumbers, finely diced (peeled if desired)
8 tablespoons yogurt
1 clove garlic, finely chopped
1⁄4 cup fresh mint, finely chopped
Directions:
1⁄4 cup fresh dill, finely chopped
1 teaspoon dried mint 1 1⁄2 cups cold water Olive oil for garnishing (optional)

Place yogurt in a mixing bowl. Gradually whisk in the water until you get the consistency you want. Some prefer their 'cacık' watery while some like it thick. It's completely up to you. Next add the cucumbers, garlic, and spices and mix thoroughly until smooth. Adjust the spices to your taste. It is best to refrigerate your 'cacık' for a few hours before serving. Serve your ice-cold 'cacık' in small, decorative bowls. Drizzle a little bit of olive oil in the center of each one. Garnish each with a small sprig of fresh mint or dill weed.
