Keto Cinnamon Toast Crunch Cereal
¼ C ghee
¼ C coconut oil (or ghee for Carnivore-ish)
1/3 C keto sweetener (1:1 ration to sugar) + 2 TB (optional)
¼ tsp stevia (if keto sweetener doesn’t match sugar 1:1)
1 ½ TB cinnamon (or pumpkin pie spice or cacao powder)
¼ tsp salt
2 tsp vanilla extract
4-5 ounces pork rind (broken into bite size pieces)
==========================================
1) Break up pork rinds into bite size pieces in a large mixing bowl.
2) Place ghee and coconut oil in small saucepan and warm just until melted (not hot).
3) Add sweeteners (except the additional 2 TB) and whisk until smooth.
4) Add cinnamon, vanilla and salt and whisk until smooth.
5) Drizzle 1/3 of the cinnamon topping onto the pork rind pieces and mix with spatula or hands to spread. Do these two steps two more times until the topping is gone and the pieces are well-covered.
6) Sprinkle the remaining 2 TB of sweetener evenly over the pieces, trying to hit those that didn’t get as much of the topping.
7) Place in an airtight container in the refrigerator for one hour. (store in fridge, too)
8) Serve with half-n-half, cream cut with water or a favorite nut/seed milk.
9) Enjoy! ????

Low Carb Paleo Cinnamon Crunch Cereal Recipe
Keto approved. (WHAT!?!) This cinnamon cereal is chock full of delicious, good-for-you ingredients and it is paleo too! It retains a nice crunch once milk is poured over it in a bowl thanks to the coconut oil coating all the nooks and crannies. Spread the mixture out onto a baking sheet in a thin layer, but do not disturb it after it completely cools to create delicious, clumps of cereal. Break apart when cooled. This is super yummy as a granola snack too.
