How To make Crunch Cereal
3 c Rolled oats, quick-cooking
1 c Unsweetened wheat germ
1/2 c Coconut, flaked
-OR- shelled sunflower seeds 1 c Nuts, coarsely chopped
1 c Raisins
1/2 c Oil
1/2 c Honey
2 ts Vanilla
Preheat oven to 2275 F (very slow). Mix rolled oats, wheat germ, coconut or sunflower seeds, nuts, and raisins in a large bowl. Mix oil, honey, and vanilla. Pour over rolled oat mixture. Stir lightly until evenly mixed. Spread mixture on a 15- by 10- by 1-inch baking pan. Bake 1 hour, stirring each 15 minutes. Cool. Break up any large lumps. Store in an airtight container. Ingredients (makes 6 servings):
Dough:
1 ½ cups almond flour (150 g/ 5.3 oz)
4 tbsp flaxmeal (28 g/ 1 oz)
1 tsp gluten-free baking powder
2 tsp cinnamon
⅓ cup granulated Erythritol or Swerve (67 g/ 2.4 oz)
½ tsp sea salt or pink Himalayan salt
¼ cup melted butter or ghee or virgin coconut oil (60 ml)
1 tsp unsweetened vanilla extract
3 tbsp water (45 ml)
Topping:
2 tbsp melted butter or ghee, divided (30 ml)
1-2 tsp cinnamon, divided
1-2 tbsp granulated Erythritol or Swerve, divided
Serve with: unsweetened almond milk, cashew milk or coconut milk
Note: To crisp them up, I baked them for 20 minutes, 150 C/ 300 F (fan assisted). If you use conventional oven, you will need to add 20 C (so bake at 170 C/ 340 F).

INGREDIENTS
¼ cup (50g) golden erythritol
2-3 teaspoons (6-9g) cinnamon powder
1 ⅓ cups (135g) blanched almond flour
1 teaspoon (3g) cinnamon powder
⅛ teaspoon (1g) baking soda
½ teaspoon (3g) salt
2 tablespoons (30mL) unsweetened almond milk or water
Microwave for 2 to 2 ½ minutes or
Bake at 350°F (177°C) for 12-15 minutes.
Let it cool completely.

Ingredients
2 c unbleached flour
1 ts baking soda
1 ts ceylon cinnamon
⅓ c sugar
¼ ts fine salt
½ c whole milk
1 ts pure vanilla extract
¼ c unsalted melted butter
2 tb salted melted butter
4 tb sugar
½ ts ceylon cinnamon
Instructions
In a medium bowl, whisk the flour, baking soda, cinnamon, sugar and salt together.
Add in the milk, vanilla and butter.
Stir until it binds into a dough. Work the dough vigorously with a wooden spoon or use your hands to knead it together.
Flatten/roll out the dough as thinly as you can. Sandwiching the dough between sheets of parchment/wax helps the process along.
Cut out into squares {how big is up to you but remember they will grow}.
Brush with the 2 tb melted butter.
Combine the 4 tb sugar and ½ ts cinnamon and liberally sprinkle it over the buttered dough.
Chill this for 15-20 minutes.
Prick each square before baking at 350 for 11-13 minutes. Keep your eye on them so they don't burn as bake time will vary with the size of your squares but do allow them to crisp up.
Cool and transfer into a bowl and enjoy as cereal or into an air tight container to enjoy up to 1 week.
