How To make Crockpot Stuffed Peppers

breadcrumbs, soft, fine

egg, beaten

salt

oregano

garlic powder

milk

fennel seed, crushed

spaghetti sauce
Directions:
Wash peppers and halve lengthwise, cleaning out seeds, and set aside. Combine ground beef, breadcrumbs, egg, seasonings and milk into a meatloaf-like mixture. Pack into pepper halves. Place in crockpot, stacking peppers in layers. Pour spaghetti sauce over top. Cook in crockpot on high for 4 hours, or on low from 6 to 8 hours.
Serves 6-8.

This easy stuffed pepper soup turns a dinner favorite into an even cozier one-pot meal. It's loaded with ground beef, rice, bell peppers, onion, tomatoes, and a variety of spices.
It has all the flavors from my classic stuffed peppers recipe (which is a fan favorite), but it has a few perks. It's a one-pot meal, takes a bit less time to cook, and excludes the whole stuffing process. A meal prep winner for sure!
And if you're a big fan of soup season, I can definitely see this being one of those soup recipes you rely on when you don't know what to cook for dinner. It's healthy, homey, perfectly filling, and will leave everyone completely satisfied.

How to Make Stuffed Peppers in the Slow Cooker ~ Crockpot Stuffed Peppers
INGREDIENTS:
4-5 medium sized bell peppers - capped and vein/seeds removed
1/2 to 3/4 cup grated cheddar cheese
2 cups marinara sauce
MEAT MIXTURE:
1 1/2 pounds of ground beef
1 cup cooked white rice
1/4 cup diced onion
1/4 cup grated colby jack cheese
1 egg
1/2 tsp. garlic powder
1/2 tsp. basil
1/2 tsp. oregano
1/4 tsp. salt
dash of black pepper
2 tbsp. marinara sauce
Cook on high for 3-4 hours or on low setting for 6-7 hours.
I cooked the peppers on high for 3 1/2 hours. It seems that every crock pot or slow cooker heat temperature is different so just check every so often for doneness and desired bell pepper tenderness.
We like it with a little firm exterior and soft interior.
Serve with rice, noodles, mashed potatoes or just a side salad and piece of garlic bread.

Crockpot Stuffed Pepper Soup Recipe

1 pound lean ground beef
1 red pepper (diced)
1 yellow pepper (diced)
1 green pepper (diced)
1 medium onion (diced)
1 tsp minced garlic
4 cups chicken broth (I used unsalted)
15 oz can tomato sauce
14.5 oz can fire roasted tomatoes
1 small can tomato paste
2 bay leaves
1 tsp oregano
1 tsp basil
1 tsp salt
1/2 tsp black pepper
1/2 cup minute rice (uncooked) Add the last 20-30 minutes of cooking.
Cook on high 4-5 hours or low 7-8 hours.
Top with shredded cheese if desired!
