How to Make Easy Stuffed Bell Peppers | The Stay At Home Chef
Stuffed Bell Peppers are a great way to enjoy summer's favorite veggie. These bell peppers are stuffed a delicious cheesy ground beef and rice mixture that your family is sure to love!

✅Ingredients
• 6 whole bell peppers, any color
• 3/4 to 1 pound lean ground beef
• 1 white onion, diced
• 3 cloves garlic, minced
• 1 (15 ounce) can diced tomatoes, drained
• 1 cup cooked white rice
• 1 cup frozen corn
• 1 tablespoon Worcestershire sauce
• 1½ teaspoon salt
• 1/2 teaspoon black pepper
• 1½ cups shredded pepper jack cheese, divided
✅Instructions
1️⃣ 00:00:20 - Preheat oven to 350 degrees F. Lightly grease a 9x13 pan.
2️⃣ 00:00:26 - Trim the tops off each bell pepper and remove seeds and membrane from inside. Place the bell peppers into the prepared pan.
3️⃣ 00:00:50 - In a large skill over medium high heat, cook ground beef and onion until browned. Drain any excess fat or liquids. Add in garlic and cook 1 minute more.
4️⃣ 00:01:30 - Remove from heat and stir in tomatoes, cooked rice, corn, Worcestershire sauce, salt, pepper, and 1 cup pepper jack cheese.
5️⃣ 00:02:12 - Spoon mixture into bell peppers until full. Sprinkle remaining cheese over the top.
6️⃣ 00:02:48 - Bake in the preheated 350 degree oven for 30 minutes until cheese is bubbling and browned.

Cheesy Stuffed Peppers

These affordable and veggie-friendly stuffed peppers are a go-to weeknight dinner idea for the colder months.
FULL RECIPE
Ingredients:
- 1 cup Tastic Jasmine Rice
- 1 onion
- 1 clove crushed garlic
- 1 tbsp olive oil
- 1 cup sweet corn
- 1/2 cup kidney beans
- 2 tbsp coriander
- 1 cup finely diced tomato
- 1 tsp smoked paprika
- Salt and pepper
- 4 bell peppers
- Grated cheddar cheese
Method:
1. Soak 1 cup Jasmine Tastic Rice for 15 minutes.
2. Bring the rice to a boil in lightly salted water, cook for 15 minutes.
3. Drain and set aside.
4. Brown 1 onion and 1 clove crushed garlic in olive oil.
5. Once browned, add 1 cup sweet corn, 1/2 cup kidney beans, 2 tbsp coriander, 1 cup finely chopped tomato, 1/4 tsp smoked paprika to the pan and stir.
6. Add the mixture to the cooked rice and season with salt and pepper.
7. Hollow out the peppers, removing all of the seeds.
8. Spoon the rice mixture into each pepper and top with grated cheese.
9. Bake at 180 degrees Celsius for 20-25 minutes.
10. Serve and ENJOY!

-Cream 4 tbs
-Lemon juice 1 & ½ tbs
-Cooking oil 2 tbs
-Pyaz (Onion) chopped 1 medium
-Lehsan (Garlic) chopped 1 tbs
-Qeema (Mince) 350g
-Namak (Salt) 1 tsp or to taste
-Lal mirch powder (Red chilli powder) 1 tsp or to taste
-Onion powder ½ tsp
-Lehsan powder (Garlic powder) 1 tsp
-Zeera powder (Cumin powder) 1 tsp
-Kali mirch powder (Black pepper powder) ½ tsp
-Paprika powder 1 tsp
-Chilli sauce 2 tbs
-Tomato puree 1 Cup
-Dried parsley 1 & ½ tsp
-Yakhni (Stock) 1 Cup or as required
-Cheddar cheese grated ½ Cup or as required
-Lal lobia (Red kidney bean) boiled ½ Cup
-Corn kernels boiled ¾ Cup
-Chawal (Rice) boiled ½ Cup
-Shimla mirch (Capsicum) as required
-Cheddar cheese grated
-Mozzarella cheese grated
-Corn kernels boiled
-Dried parsley
-Lal mirch (Red chilli) crushed
Directions:
-In a bowl,add cream,lemon juice,whisk well and let it rest for 2-3 minutes.Sour cream is ready!
-In frying pan,add cooking oil,onion and sauté until translucent.
-Add garlic and mix well.
-Add mince and mix well until it changes color.
-Add salt,red chilli powder,onion powder,garlic powder,cumin powder,black pepper powder,paprika powder,mix well and cook for 1-2 minutes.
-Add chilli sauce,tomato puree and mix well.
-Add dried parsley,stock and mix well,cover and cook on low flame for 6-8 minutes.
-Let it cool.
-Add cheddar cheese,red kidney beans,corn kernels,sour cream,rice,mix well & set aside.
-Cut capsicum and yellow bell pepper from the center and deseed them.
-In baking dish,place capsicum and yellow bell pepper and microwave for 2 minutes.
-Stuffed with prepared mince filling and add cheddar cheese,mozzarella cheese,corn kernels,dried parsley and red chilli crushed.
-Bake in preheated oven at 180 C until cheese melts (8-10 minutes) & serve!
