Creamy Smothered Pork Chops with Mushrooms and Sage:
Ingredients:
Bone-in pork chops (amount based on preference)
Olive oil
Butter (around 2 tablespoons)
Spice blend (SOS blend or a mix of equal parts garlic powder, onion powder, black pepper, salt, paprika, and optional monosodium glutamate)
Fresh thyme
Fresh sage
Onions (1 and 1/2 onions)
Assorted mushrooms (portobello, cremini, oyster, etc.)
Garlic cloves (amount based on preference)
Chicken broth (around 1 and a half cups)
Half and half (around 2 cups)
Parsley
Instructions:
Season the pork chops on both sides with the spice blend (SOS blend) consisting of garlic powder, onion powder, black pepper, salt, paprika, and optional monosodium glutamate. Use a mixture of equal parts for seasoning.
Heat a combination of olive oil and butter in a skillet over medium heat. Brown the seasoned pork chops on both sides in batches. Avoid overcrowding the skillet to ensure proper browning. Once browned, set the pork chops aside.
In the same skillet, add more butter if needed. Add onions, fresh thyme, and sage stems. Cook until the onions start to wilt and become translucent.
Add assorted mushrooms and garlic to the skillet. Let them cook until the mushrooms release their flavors and the mixture becomes fragrant.
Return the browned pork chops to the skillet, including any collected juices. Add chicken broth to create a flavorful smothering liquid.
Simmer the pork chops in the skillet with the mushroom and onion mixture for about 10 minutes or until the pork is fully cooked through.
Pour in the half and half, allowing it to heat up without boiling. This creates a creamy and rich sauce for the dish.
Season with additional fresh sage and parsley to enhance the flavors and garnish the dish.
Taste the dish to ensure the flavors are to your liking before serving.

Ingredients
Seasoning
1 tsp black pepper
1 tsp salt
1 tsp onion powder
1 tsp paprika
1 tsp poultry seasoning
1 tsp oregano
2 lbs pork chops
3 tlbs flour
1.5 tlbs olive oil
2 tlbs butter
1 large onion sliced
1 celery stalk chopped
8 oz mushrooms
.25 red bell pepper diced
2 cloves garlic minced
2 cups pork stock (chicken stock or water)
1 cup cream
Chopped parsley
Sweet Potato Biscuits
Cooking spray or butter (for greasing biscuit tray)
2 3/4 c. all-purpose flour
1 tbsp. baking powder
2 tsp. kosher salt
2 tbsp. brown sugar
1/2 c. (1 stick) butter, cold, cut into small slices
2 medium sweet potatoes (mashed)
1/3 c. cold buttermilk
1/3 c. Melted butter (for brushing)
Step 1
Preheat oven to 425°, grease baking sheet with cooking spray or butter. In a large bowl, combine all dry ingredients. Add butter and mix in, until flour is crumbly. Add mashed sweet potatoes, then buttermilk and stir until it forms a soft round ball.
Step 2
You will need a clean surface to knead and bring dough together. Knead dough and roll out with a cold rolling pin (thickness to your liking).
Step 3
Use a glass or round cutter to cut biscuits out and place them on greased or butter baking sheet.
Step 4
Place biscuits in oven for about 20 minutes, brush tops of biscuits with melted butter when they come out.

Smothered Pork Chops Recipe + Homemade Gravy and Caramelized Onions
These smothered pork chops are pan-roasted to perfection and then simmered in a delicious caramelized onion gravy and finished with fresh herbs.
This classic southern dish is the epitome of comfort food. It’s an incredibly easy to make one-pan meal consisting of pork chops, caramelized onions, and a homemade gravy that makes for the perfect weeknight meal.
Ingredients for this recipe:
• 4 thick-cut bone-in pork chops
• 1 ½ tablespoons oil
• 1 tablespoon unsalted butter, cut into chunks
• 3 peeled and thickly sliced medium-size yellow onions
• 3 finely minced cloves of garlic
• 3 tablespoons all-purpose flour
• 32 ounces chicken stock, beef stock, or combination of both
• ¼ cup heavy whipping cream
• sea salt and pepper taste
Serves 4
Prep time: 10 minutes
Cook Time: 20 minutes
Procedures:
1. Season the pork chops well on each side with sea salt and fresh cracked pepper to taste.
2. Add the oil into a large frying or cast-iron pan over high heat until it begins to lightly smoke.
3. Next add in the pork chops and butter and turn the heat down to medium-high and cook for 3-4 minutes or until very browned.
4. Turn the pork over, baste, and cook for another 3-4 minutes and set aside.
5. In the same pan turn the heat down to medium and add in the onions and cook for 5-7 minutes or until lightly browned.
6. Next, stir in the garlic and cook for 1 to 2 minutes.
7. Stir in the flour until completely mixed in and then add in the stock and turn the heat up slightly to medium-high and cook until it becomes thick like gravy, about 3-4 minutes.
8. Add the pork chops back in the pan to heat them up and finish by stirring in the heavy cream.
9. Garnish with optional finely minced fresh parsley, rosemary, and thyme.
Chef Notes:
Make-Ahead: While these are meant to be eaten right away, you can make these up to 1 hour ahead of time, just keep the pork chops in the gravy over very low heat.
How to Store: Cover and keep in the gravy in the refrigerator for up to 4 days. These will freeze covered in the gravy for up to 3 months. Thaw in the refrigerator for 1 day before reheating.
How to Reheat: Add the desired amount of pork and gravy to a medium size pan and cook over medium-low heat until warmed, which takes about 10 minutes. You can also reheat in a microwave.
You can use chicken stock, or beef stock, or a combination of both like I did.
I prefer to use double thick-cut bone-in pork chops for the most flavor. You can easily substitute with thin cut pork chops, pork loin, or pork tenderloin.
