This crustless quiche is super versatile, you can use any leftover vegetables, meats or cheeses you have in the fridge.

CRUSTLESS QUICHE RECIPE
(makes 8 slices)
Ingredients:
1/2 cup red bell pepper, finely chopped (75g)
1/2 cup green onions, finely chopped (50g)
1/2 cup sweet potato, grated (75g)
1 cup cheddar cheese, grated, or any other melting cheese (100g)
5 eggs
1 cup cottage cheese (225g)
1/2 cup milk (120ml)
1 tsp mustard
1/2 tsp salt
1/4 tsp black pepper
1/4 tsp ground nutmeg
1/4 cup ground oats, or oat flour (25g)
NUTRITIONAL INFO (per slice):
158 calories, fat 8.6g, carb 7.9g, protein 12.3g
Preparation:
In a greased pan pan (I use 8-inch or 20cm cast iron skillet) layer down all the veggies and sprinkle with grated cheddar cheese.
In a blender add 5 eggs, cottage cheese, milk, mustard, salt, black pepper, ground nutmeg and ground oats. Blend until really smooth.
Pour the mixture over the veggies and move around with a fork to evenly distrubute the filling.
Bake in a preheated oven at 350F (180C) for 35 minutes.
Let it cool for 20 minutes, then slice into 8 equal pieces.
Serve and enjoy!

• 180 gms all-purpose flour
• 60 gms butter
• 2 to 3 tbsps chilled water
????????????????????????????:
• 200 gms smoked chicken sausages, chopped into 1/2 inch pieces
• ½ onion, diced
• 1 cup shredded cheddar cheese
• ½ cup whole milk
• 1 cup fresh cream
• 4 eggs, large
• ½ tsp salt
• 1/4 tsp black pepper, finely ground
• 1/4 tsp chili flakes paprika
• 1/8 tsp ground nutmeg
• A few sprigs parsley, chopped
• 1 egg white, for brushing

1. Rub flour and hard butter with finger tips till it turns crumbly. Add water just to bind the dough.
2. Roll out 1 pie crust on a lightly floured surface or between 2 pieces of parchment paper, then transfer to the tart pan. Press the pastry dough into the pan with your fingers to mold to the pan.
3. Prick the surface of crust with fork. Place a crumb sheet of butter paper add kidney beans. Freeze for about 30 mins, meanwhile, preheat the oven to 170°C with the rack in the middle.
4. Pre-Bake the crust with raw kidney beans.
5. Brush the inside of the baked tart with a whisked egg white.

1. While pie is pre-baking, in a microwave glass bowl, add chopped sausages, diced onions and cook for 4 mins.
2. In another large bowl whisk 4 eggs, add milk & cream, 1/2 tsp salt, 1/4 tsp pepper, 1/4 tsp paprika & 1/8 tsp of nutmeg and whisk together for about a minutes to incorporate a little bit of air into the custard.
3. Stir in the cheese, prepared bacon and onion. Then pour the filling into the prebaked crust.
4. Bake the Quiche Lorraine in a preheated oven at 170°C for about 45 mins, or until a knife inserted into the middle comes out clean & the center jiggles slightly. The quiche will continue cooking after it is removed from the oven.
5. Cool slightly before serving and garnish with parsley if desired.
