Cranberry pork chops freezer meal
I put them right into the crockpot liner but later decided that it would be better to put into a freezer bag since the liners are thin and the chips have bones.

Ingredients:
2 thick-cut pork chops (1-1.25 inches)
Olive oil
Salt
Pepper
Garlic powder
1/2 onion, chopped
1.5 cups cranberries
2 tsp fresh rosemary
Several sprigs of fresh thyme
1 Granny Smith apple
1/2 cup real maple syrup (Grade B preferred)
1 cup chicken broth
1.5 tbsp Dijon mustard
2 tbsp butter
Instructions:
Preheat your cast iron skillet over medium-high heat and add a little bit of olive oil.
Season both sides of your pork chops with salt, pepper, and garlic powder.
Add your pork chops to the skillet and cook for approximately 6 minutes per side, or until nicely browned.
Remove the pork chops from the skillet and set them aside to rest.
In the same skillet, add your chopped onion, cranberries, rosemary, and thyme. Cook for about 5 minutes or until the onions become fragrant and the cranberries begin to pop.
Add your chopped Granny Smith apple, maple syrup, and chicken broth to the skillet. Use your wooden spoon to scrape up any fond on the bottom of the skillet.
Add your Dijon mustard and let the mixture cook for a minute or so until the apple softens slightly.
Stir in your butter until it melts and combines with the sauce.
Add your pork chops back to the skillet and spoon the sauce over the top.
Cook for an additional 2 minutes or until the pork chops are heated through.
Serve the pork chops with a generous spoonful of the apple-cranberry sauce on top.
Enjoy your festive pork chops with apples and cranberries!
