How To make Creamy, Fudgy, Nutty Brownies
16 oz Unsweetened chocolate, chopp
1/2 c Magarine or butter
1 c All-purpose flour
1/2 c Nuts, chopped & toasted
1/4 ts Baking powder
1 1/2 c Sugar
3 Eggs
1 t Vanilla
TOPPING:
3 oz Bittersweet chocolate, chopp
6 oz Cream cheese
1 Egg
1/4 c Sugar
1 tb Milk
1/2 ts Vanilla
GLAZE:
2 oz Semisweet chocolate
1 t Shortening
Fresh raspberries
In a small saucepan melt unsweetened chocolate and the margarine or butter over low heat, stirring occasionally. Remove from heat; cool. Grease and lightly flour an 8x8x2-inch baking pan; set aside. In a medium mixing bowl stir together flour, walnuts or pecans, and baking powder; set aside. In a large mixing bowl stir together the cooled melted chocolate mixture and the sugar. Add the eggs and vanilla. Using a wooden spoon, lightly beat mixture just till combined. (Do not overbeat or brownies will rise during baking, then fall and crack.) Stir in the flour mixture. Pour the batter into the prepared pan; spread to edges. Bake in a 350 degree oven for 40 minutes. Meanwhile, for topping, in a small saucepan melt the semisweet or bittersweet chocolate over low heat, stirring occasionally; cool slightly. In a medium mixing bowl beat cream cheese with electric mixer on medium speed about 30 seconds or till softened. Add the melted semisweet or bittersweet chocolate, egg, sugar, milk, and vanilla. Beat until combined. Carefully spread topping evenly over hot brownies. Bake in the 350 degree oven about 10 minutes more or till topping is set. Cool in pan on a wire rack. Cover; chill at least 2 hours. To serve, cut brownies into triangles or bars. (To cut into triangles, first cut into rectangles, then cut in half diagonally.) If desired, in a small saucepan melt 2 squares chocolate and shortening; drizzle over brownies and onto plate. Garnish with raspberries, if desired. Cover and refrigerate to store. Makes 12 to 16 servings.

Ingredients:
-Akhrot (Walnuts) 1 Cup
-Cooking milk chocolate 200g
-Makhan (Butter) 125g
-Cocoa powder 1/4 Cup
-Sugar ½ Cup
-Brown sugar 1/4 Cup
-Anday (Eggs) 2 (room temperature)
-Vanilla essence ½ tbs
-Namak (Salt) ½ tsp
-Baking powder 1/4 tsp
-Maida (All-purpose flour) sifted ½ Cup
-Cooking milk chocolate chunks
-Akhrot (Walnuts) roughly chopped ½ Cup
Directions:
-Roughly chop walnuts & cooking milk chocolate into chunks & set aside.
-In a saucepan add butter and let it melt.
-Add 100g cooking milk chocolate (reserved 100g for later use), cocoa powder & mix well. Cook on low flame until chocolate melts & set aside.
-In spice mixer add sugar, brown sugar and grind coarsely.
-In a bowl add ground sugar, eggs, vanilla essence and whisk well.
-Add prepared chocolate mixture and mix well.
-Add salt, baking powder and whisk again.
-Add all-purpose flour and mix well.
-Add chopped walnuts and give it a good mix.
-Grease 7 x 9 “oven safe baking dish with cooking oil and place butter paper.
-Pour brownie batter in prepared baking dish and add reserved cooking chocolate chunks (100g) & walnuts.
-Bake in preheated oven at 175 C for 20-25 minutes.
-After baking, let it cool and cut into pieces. Serve !

I finally mastered FUDGY BROWNIES! I won't use another brownie recipe again
RECIPE:

If you're looking for an indulgent, fudgy brownie that is extremely flavorful and not cloyingly sweet, this recipe is it! Literally one of the best brownies I've ever had! With that beautiful shiny crinkled top (which took me a while to figure out ????), and gooey, rich interior, this will be your new favourite brownie recipe!
INGREDIENTS:
- ¾ cup (105 g) dark chocolate - I use 50% dark chocolate, semi-sweet chocolate chips okay too
- ¾ cup (90 g) flour - regular, all purpose
- ½ tsp salt
- ½ cup (113 g) unsalted butter - room temperature or melted
- ¼ cup (53 g) unflavored vegetable oil - I use canola
- 1 cup (200 g) white sugar - granulated
- ½ cup (100 g) soft brown sugar - packed, see note 1 on blog
- ⅔ cup (75 g) cocoa powder - unsweetened
- 1 tsp coffee powder
- 1 tsp vanilla essence/extract
- 2 large eggs - room temperature
NOTE: In the video I mention 1/2 a cup or 100g of butter, but it should be 113g of butter as stated in the ingredients list above :)
Bake at 160 °C (320°F) with the fan on for 22-25 minutes depending on how fudgy you want your brownies to be (I recommend 22 minutes). If your oven doesn't have a fan option, then you will need to increase the baking temperature to 175°C (347°F). Once done, poke a toothpick into the center and it should come out dirty.

FOR FUDGY BROWNIES
100g chopped chocolates
1/2 cup unsalted butter
1/2 cup granulated sugar
1/2 cup brown sugar
1 teaspoon vanilla
2 large eggs
1/4 teaspoon salt
1/2 cup all purpose flour
1/2 cup unsweetened cocoa powder
1/4 teaspoon baking soda
FOR GANACHE
1 cup chopped chocolates
1/2 cup all purpose cream (or heavy cream
Chopped peanuts for toppings
DIRECTIONS
In a bowl, start melting the chopped dark chocolate with the unsalted butter using a microwave or double-boiler. Stir until completely melted. Let it cool for a few minutes.
Once cooled down a little, add granulated sugar and brown sugar. Mix until combined. Then add eggs one at a time. Stir in between until all eggs are added and well-combined. Then add vanilla extract and salt. Mix well.
Using a clean finger, check if the sugar is completely dissolved. Once ready, sift the flour, baking soda, and cocoa powder. Make sure to sift properly to prevent lumping parts. Then give it a good mix once more.
Prepare an 8×8 baking pan greased with butter or oil. Line with parchment or baking paper for easier unmolding.
Then, gently pour the brownie mixture to the baking pan. Tap against the table to remove air bubbles.
Bake in a preheated oven at 180°C for 20-25 mins. Do the toothpick test to see if it’s ready. After that, let it cool and set.
FOR CHOCOLATE GANACHE
Combine chopped chocolates and heavy cream in a heat-proof bowl. Microwave for a minute until melted. Stir until completely melted and shiny. (you can also do a double-boiler method)
Pour the hot chocolate ganache onto the brownie. Top it with any kind of roasted nuts to suit your liking. Chill for at least 4 hours.
Finally, you can cut your fudgy chocolate brownie into small bite-sized cubes and set it in a small cupcake liner. Enjoy!

½ cup butter
1 cup white sugar
2 eggs
1 teaspoon vanilla extract
⅓ cup unsweetened cocoa powder
½ cup all-purpose flour
¼ teaspoon salt
¼ teaspoon baking powder
Preheat oven to 350 degrees F (175 degrees C). Grease an 8-inch square pan.
In a large bowl, whisk together hot melted butter and sugar together until the sugar is dissolved. The hot and melted butter ensure the cracked top!
Add in the eggs and whisk another two minutes. The longer you whisk the eggs, the better. Add in the vanilla.
Sift in the flour, cocoa powder, salt and baking powder. Combine the batter with a spatula until combined.
Spread batter onto the pan and bake in preheated oven for 20 to 25 minutes. Do not overcook. I like to bake mine in one of the top shelves of the oven to ensure it does not over dry.
