1 lb Crabmeat
1/4 t Celery salt
1 Chicken bouillion cube
1 c Boiling water
Dash pepper 1/4 c Chopped onion
1 qt Milk
1 c Butter
Chopped parsley 3 T Flour
Dissolve boullion cube in water. Cook onion in butter until tender, blend in flour and seasonings. Add milk and bouillion gradually; cook until thick, stirring constantly. Add crabmeat, heat. Garnish with parsley.

Low Carb, Simple, Thick, Creamy, and Delicious Cream of Crab Soup! It's the middle of winter and we wanted some Crabs. We bought a dozen Large Males steamed from a local Crab Shack. Unfortunately they weren't up to our standard. Instead of returning them and complaining, we decided to pick them and whip up a batch of my Cream of Crab Soup. I created this recipe years ago and it has always been a crowd pleaser! This time we tried doing a low carb Keto friendly version. It turned out Amazing!!

INGRDEDIENTS
1/2 pound lump blue crab meat
5 cups lobster stock
2 cups whole milk
3/4 cups heavy cream
1/2 cups dry cherry
1 1/2 cups flour
1 tsp old bay
1 tsp salt
1/4 tsp ground nutmeg
1/4 tsp ground black pepper
1 bay leaf
2 sticks butter
1 1/2 cups minced celery
3/4 minced yellow onion
3/4 cups minced shallot
Recipe
1. In medium soup pot met butter
2. Add minced celery, onion and shallots.
3. Cook until completely tender.
4. Add bay leaf and 1/2 tsp salt.
5. Add flour, cook 3 minutes of medium heat. Stir constantly.
6. Gradually whisk in lobster stock and milk. Stop when you reach a consistency that is right for you.
7. Add heavy cream and dry.
8. Add old bay, nutmeg and taste for salt and pepper.
9. Add most of the crab meat, keeping some in reserved to top off each bowl!
10. Serve immediately, the crab meat doesn't need to cook.

1 lb Lump Crab Meat (preserving some to garnish)
4 tbs butter
4 tbs flour
1/2 grated onion
1-2 stalk grated celery
1-2 tsp minced garlic (optional)
2 bay leaves
1 cup half & half cream
2 cups heavy cream
1.5 cups chicken stock or seafood stock
1.5 tbs lobster base
1 tbs Worcestershire sauce
hot sauce to taste
1/2 cup sherry (plus more if desired)
old bay, salt & pepper, garlic powder, and onion powder to taste
Directions:
Melt butter in a large stockpot or dutch oven over medium heat.
Mix in the onion, celery, and garlic and season with salt and pepper. Sweat the veggies for about 1-2 minutes
Add in Lobster Base and stir to incorporate
Stir in flour to form a roux. Cook this mixture for about 3 minutes to cook out the raw flour taste.
Gradually whisk in the half & half and bring to a simmer
Next, whisk in your heavy cream and chicken stock and bring back to a simmer
Pour in your sherry (reserve more for later if desired based on taste)
Add Old Bay, Worcestershire, Hot Sauce and taste for seasoning. Adjust as needed
Cover and simmer for 30 minutes, stirring occasionally
Add in crab meat and simmer for another 15 minutes. Taster one more time for seasoning and then serve mr make it happen
